Steven,I absolutely love watching your mum , totally came across her by accident but love the way she goes through each recipe step by step ,she has really inspired me to cook from scratch more, I can tell that she was a fantastic cook and would loved to have eaten her food , I was so upset to hear that both her and Bucky passed away within months of each other, but I’m so glad you have kept the channel up and I enjoyed you making the German cake , you used the wrong whisk on the mixer , your mum would have used the paddle with the rubber side to scrape the bowl , but you did a great job . I live in England and have made your mums better than anything cake so far and plan to make many more of her recipes xxx
I almost never post on anything but I want to let you know what a huge impact your youtube channel makes. I come from a family of good cooks but growing up my mom had severe OCD and wouldn't let us help her in the kitchen or go in her kitchen. I learned enough about cooking to feed my family mostly boxed foods or take out. Family get- together, I was the one asked to bring the drinks are paper goods. I started maybe 3 years ago cooking with your videos. I have every recipe on here in my box and in the last year have had the confidence to start putting together my own recipes. Thank you so much for what you do! Now every get together we have I am asked to bring various dishes and people actually brag on my food ...and I always tell them to check out your UA-cam page and the Coconut cake is always asked for church dinners, parties, cake walks...... If you ever do a cookbook are already have let us know where to buy it ....I'm a huge fan!!!!!

Phyllis...yes, agree 100%...you have made a delightful difference to so many of us who appreciate tasty yet simple & inexpensive 'comfort foods', etc! Thanks for "keeping it real" in our kitchens, & allowing for the simple traditions in our cooking to live on! You are a life-saver, particularly in these times when "home economics" classes are rarely part of the school programs today! (I am a retired teacher) You would have made a fantastic home-ec cooking teacher!

I really enjoyed her recipes over the years. I miss her, but her legacy is recipes made with love. The best ingredient of all was the love she had and shared with us.
I’ve made this many times and this is where I got the recipe many years ago. So easy and a go to on a very busy day❣️
I’m on Weight Watchers ...so I substituted cauliflower for the potatoes, and used 2% milk cheddar cheese (or 1 cup fat free cheese and 1 cup 2%)......fat free soup......and lite Spam!! Very filling and delicious!!

Dear Phyllis , I just wanted to tell you how much I enjoy your videos ! I've tried several of your recipes and they are all so delicious . My husband and I love the spam casserole ! You cook a lot like my mother did and she was a great cook also . I'm a 55 year old southern lady that loves to cook but I work 3rd shift so I'm always tired lol. This was so good I did add chopped red bell peppers.. everyone loved it ..many couldn't believed it was spam! ( I used hickory)...blessings again...you are missed
Just had to tell you I tried this tonight and good and bad of it. Everybody loves it that's the good and now for the bad. I had to make a lot more than you did so I had to double everything, will I used 3/4 of a can of water to 2 cans of cream of mushroom soup and it was a little more saucy than yours was. BUT it was great and my picky husband said its a keeper. Thank you so much Phyllis, keep em coming. :)

I love watching your channel. The videos are so comforting to watch. I miss my mother, and she is about your age. She's battling cancer and is three states away. I fell into the habit of relying too much on takeout and fast food. I'm trying to reconnect with the simpler times from when I was growing up (70's), and your balance of some canned and processed food with fresh meat and produce is perfect. I've had to slow down a little due to spinal injuries, and your recipes I've tried so far are all easy to prepare, and taste good. Keep doing what you are doing- you ARE making a difference :-)

I’ve never thought of using spam in a casserole but plan to try this out... this old dog has learned many new tricks from your channel.. it’s always been easier for me to watch how something is done than read it.. the cabbage being frozen after being partially is great to know.. since I’m the only one that eats cooked cabbage I rarely fix it just for me..now I can fix some and freeze what I can’t eat right away and have it more often.. thank you 😊

I love your channel. This one made me smile. We were very poor. My mom would put 2 cans of spam in a casserole dish then pour a brown sugar sauce over them and stick cloves in them then bake. My dad loved it as he did everything mom made. It was awful and I haven’t had spam in over 50 years. My 25 year old grandson loves spam.

Just made this used ham and cream of celery cause that is what I had. I enjoy your youtube channel. You are doing a great job. Very inspiring.
My bro I n law made a spam casserole, he used potatoes, carrots, onion, celery & one white turnip. He sliced & layered all the vegetables alternating with two cans sliced spam. Over each layer he poured French dressing mixed with one small can tomato sauce. I add what seasoning I prefer. Cover with foil & cook. It is so good, my husband begs me to make it. I also add a can of drained corn.
Love your recipes, Phyllis! Have you ever used "Bisquick" to make quick easy meals? I was happy to learn how to make their "Impossible Pies"...very easy & tasty & so adaptable! I loved to make their classic chicken & broccoli 'impossible pie"....and all the other "impossibles" that made 'pies" where you just poured the bisquick/milk mixture over your base & you got a tasty casserole/pie type of dish in no time. I adapted many recipes & rarely was disappointed. Great time-savers, & inexpensive~ thanks again for your amazing & nostalgic meal creations!

Michael Monroe I used to be a snob about it until I actually tried green bean casserole at thanksgiving and realized damn I’ve been missing out! It’s such an easy and inexpensive way to spice up any casserole on earth. And it’s almost always on stock in the pantry ready to go! Added bonus.

Hi Miss Phyllis. I love your videos. My Great Grammaw from Arkansas used White Lily products ... corn meal and flour etc. I hadn't heard of House of Autri, but I haven't lived down south too much in my life but I love your home recipes and you and your husband look like a very nice couple.

I love this recipe My husband will love this Span casserole and cooked cabbage, here in Ohio we make corn bread I was raised in Kentucky and we never put sugar in corn bread but I am sore others do and I don't have a problem with it at all, thank you for all your recipes I am still working on watching all your videos LOL

Your recipe sounds good. Will definitely have to try it. It also reminds me, that years ago, there was a recipe I cut from the back of the Creamettes, elbow macaroni box, called "Holiday Casserole. I haven't made it in years, but If I remember correctly, It called for Spam, cooked macaroni, cheese, onions, celery, and a cream soup.
Ms Phyllis I have never seen cornbread made your way before ... my mom and grandmother always told me to heat my oil in my cast iron skillet then get it hot and then pour into my batter and mix it up good then pour back into the hot cast iron ... but yourd looks great and I have never had spam casserole before do definitely gonna try it ...thanks for sharing ....

Thank you for this recipe. I surely WILL make this. I only knew to fry Spam, or make sweet and sour pork with it (it makes better s&s pork than you can usually get in a restaurant).

Phyllis, my hubby loved this so much that I had to make it again! He worked a 15 hr shift (he’s a police officer) & this time I added a 4oz can of chopped green chilies for fun. Will let you know how it turns out!

Sounds like a German farmers breakfast-hashbrowns O'Brien cubed turkey ham( jenno) 6 scrambled eggs, sharp cheddar cheese bake for 35-45 min at 400

That's my favorite, only deference is I always bake my corn bread in my old cast iron skillet.
Agreed my cornbread also goes in a cast iron pan. No sugar nor egg. It's not a cake 🏇

There is a lower sodium Spam and of course low sodium cream of mushroom soup. You can cut down the saltiness quite a bit with those. I'll definitely make his soon.

I do ham and potatoe casserole like that after holiday meals if I have enough ham. It is sooooooo good! I have to make a big one, so I put mine in a big blue roasting pan. 😂😂 my husband loves eating that for leftovers, actually any leftovers!
You and I are about the same age. My mother fixed us spam sandwiches, fried with eggs for breakfast and so on. A couple of years ago my cousin and I reminisced so bought a can. It wasn't at all like I remember...made me gag.
I also remembered it being better back in the 1950's too.

I buy the low sodium Spam, its perfect, the regular stuff is too salty. Sounds like a great casserole!
The regular Spam works in this recipe because the salt gets drawn out into the potatoes and sauce.
I agree the low salt is better, I only recently found the low salt in our grocery store. Have a can in the cabinet right now.

I couldn't tell from the video what size can of SPAM you used . I couldn't read the weight too fuzzy but looks like one of the 7 oz half cans of SPAM I use to make my SPAM fried rice. Definitely going to make this.

She said 350 and tried that way. But from next time I would put it 400. Don't know if different ovens have different heating systems...

You are truly appreciated! Btw...my husband would never eat English peas, until he tried my Mama's, peas and dumplings. It was delicious, but I've forgotten how she made it. Her dumplings were larger than the ones you put in your pinto beans. I was just wondering if you have ever made it, or even heard of it? She would use the Argo brand of peas. She didn't like to use the brands where the peas are too hard.
Not sure what kind of peas these are. I do think you can put dumplings in almost any kind of bean and it will taste good as long as the dumplings aren't what I call "gummy".
The "Argo" brand was canned english peas and the can was brown...as far as I can remember. I haven't seen them in a good while.

I think making sauerkraut is more of a process. I have watched videos on the subject but never actually made it myself.
My mother made the best homemade sauerkraut and I don't know how she did it. I thought you said you made it in this video and hoped you had a good southern recipe for it. I went to the kitchen opened a jar, added smoked sausage and cooked it for dinner. You do a great job and it is appreciated.
Oh i see in the older videos you had a different stove. Do you prefer the coil burners over glass top?
I love the coil burners, harder to clean but they heat up much faster than the glass cook top.
Phyllis, out here in the west, it's impossible to find self-rising white cornmeal. What amount of baking powder or soda would I need to add for this amount of cornbread?
+Crystal Brown When I have plan cornmeal I add equal amounts of self-rising flour to make the mix then add one teaspoon of baking powder.

The recipe was really good! If you're skeptical about it cause of the sodium, not to worry, it wasn't too salty. Potatoes NEED salt, like desperately. To me it balances out. If it's still too salty for your liking, just add more potatoes. 😊
