looked like the bolt was shearing a partially loaded cheeseball against the breech entrance. In a paintball marker there's typically a detent in the breech/barrel so only one ball is loaded to prevent this.
Marshmallows would be a good blend of structurally sound enough to fire yet soft for safety. Slap a Ghostbusters Logo on it and you could theme the episode.
Maybe you could make a small “funnel” insert so it only loads one cheeseball at a time and also make a small “shuffelboard” type of fork to put in front of the firering mechanism? That way the cheeseballs will be pushed more unified from the gun, one at a time ;)

I started printing the tic tac shooters a few weeks ago. Arguably the fastest upgraded thing that flings other things. There's like 4 or 5 versions currently. Some spring some rubber band powered. I opted for dual springs. Hard to cycle but it flings mints over 8 ft.
I would suggest using different ammo, such as .50 caliber mini marshmallows. The ratio of weight to surface area of cheese balls is too low, hence they are overly affected by air resistance.
A ping pong ball shooter could be scaled down to shoot cheese balls. Most of them are pneumatic, so might doo less damage to the ammo. (As an old guy, I remember an odd ping pong ball shooter from the 60s that we kids called a "blorp" gun. It was made of rubber and you stuffed a ping pong ball in to the muzzle and then squeezed the grip, causing air pressure to pop the ball out. It had a range of about 2 feet and approximately zero accuracy, but it was fun if you were 6 or 7. Still available on Amazon. Totally unsuitable for cheese balls, but a fun memory.)

Also try out to get a "longer bolt travel way", so it accelerates slower. But nice Idea, I didn't expect the cheeseballs to fly at all!
I think cheeseballs are just too light and delicate for being good projectiles. I would suggest using the same design, but finding a different food to fire. I'm not sure what is exactly like a scaled up tictac, but that's really what that needs.
That was fun. I'd think you could convert the models for a "flinger of spheroidal nerf product" to fit a cheese ball. But it will probably have to be under powered to not destroy the "artificial cheese flavored corn puff". Maybe some sort of trebuchet type of mechanism will keep it in one piece? High-5!
Just a couple of thoughts, tpu printed bolt with a cup to hold the cheeseballs together, and maybe a ‘top’ plate for the large ‘tic tac’ container that will allow only one cheeseball in the chamber at a time.
I'm thinking that the suggestion to change the input hole to limit the ammo to just one of the round shapes falling in is a good idea. For some reason I am thinking the round chocolate truffles or the hazelnut Roche type candy.
there already exists a 3d printed contraption for firing cheese balls, and you just collabed with the person who made it :V (on a slightly more serious note: the rival Spring Thunder shells ought to be cheeseball compatible, and they've been successfully tested with hotdogs, so anything in that general ecosystem should work decently)
The acceleration curve needs to be the reverse of a rubber band - slow at first then increasing. Same problem solved by the Punkin Chunkin folks!! The air cannons need to ramp up to keep the pressure the same over the length of the barrel. Trebuchets work great for this kind of accel, but cheez balls are SO light getting the release pin angle correct would be a real pain. I bet you could throw a milk dud about 30 yards though :)
Bigger. Ping pong balls. Golf balls. Tennis balls. Or a motorized wheel for the launcher for all the POWER!! Mwahaha!! *ahem* or something like that 🤷🏼♂️

I think you might have more distance if you use air power perhaps with a balloon to store and fire the air for the cheese balls
