This anime educates you on Aïnu culture, not indigenous culture. "Indigeneous culture" is meaningless on its own anyway. You can only talk about indigeneous culture when comparing it whith "imported" culture. Otherwise you just use "(the people name)'s culture".

You can get them in Asian stores. "Hinna hinna" is more like... well, "enjoy" but said when accepting food. Harder to translate it directly in English than French ("bon appetit") or Japanese (just like "itadakimasu"). Hope I helped. :)
