This reminds me of my little nephew asking his mom for some "orange rice". We're not Mexican but my nephew was being looked after by a Mexican family while my sister and her husband work. Since the pandemic he hasn't been able to go to their house so he asked his mom to make this. He complained to his mom that it's not the same. I'll be sure to share this video with my sister so she can make this for her son and hopefully my nephew will like it.

I just got done making the Instant-pot rice recipe! “Views On the Road Queens” Lady’s let me tell I’m in love. This rice tasted exactly like my auntie rice! She has severe dementia so trying to ask for the recipe... Is impossible when I first tried this rice. I cried because it tastes just like hers. Thank you so much for sharing this recipe. Now I have it and I will keep it closed to my hear!!! 😊

My mom is from Jalisco and she taught me to fry my tomato or tomato sauce with the rice, chuck of onion and whole garlic. She doesn’t dice the onion nor mince the garlic but she quarters the onion and adds one piece with a whole garlic while frying then once the rice was done she removes the onion and garlic. We were raised with killing our own chickens, so she always used fresh chicken broth. Sometimes she adds frozen/defrosted carrots and peas, I suppose to give us veggies. Perfect delish rice every time. Thanks ladies!

jackie bessard Im sorry i dont think I’ve never had that in restaurants. Are you sure it was mexican rice? Mexican rice is typically like this but orange bc of the tomato. Perhaps try using this same recipe but with brown rice?
I have never cooked rice uncovered... Very interesting. I always turn the heat off for the last 5 minutes of cooking and let the steam finish cooking my rice (while covered). Thank you for sharing all your amazing recipes ladies!

One of the biggest problems I have is making rice. Either I cook it too long or not long enough or I season it too much or too little. This recipe is definitely going to make me give it another shot. Love you ladies! Thanks for sharing your amazing recipes! ❤️❤️❤️
Tip* After you add your liquid, sprinkle your spices in and taste it before it starts to boil. If you like the taste , then finish your process. ( I don’t measure my spices, LOL)

It helps to know that you can cook this rice in an instant pot or pressure cooker like I had in the 70's. This pot is much easier to use and has more options. I do the same but add diced green chiles and stewed tomatoes in before I add the liquid(on the Stove top). I do two liquids to one portion of rice. I use El Pato hot tomato sauce as part of my liquid. This recipe was taught to me by my dad. It is a recipe that has been at the Yuma Fire Department for more than 50 years. Great every time we have it. Thanks for sharing.

I need this in my life. I am about to make this for breakfast. I craved this so much when I was pregnant. My military town does not have anything worth glancing at. Your channel helped me so much with my cravings.

I am Puerto Rican and I do love Mexican food also so some of my food is combined styles. I also have Asian friends who I learned alot from so some times I combine all 3 styles. So I rinse my Rice 3 times in a big bowl with cold water. So each time I just pour the water out carefully so the rice stays in the bowl. Now I fill the bowl up with cold water up to the first line of my finger and stop. Now I put it aside for 1 hour soaking. Now in the Rice pot I put oil to fry chicken on Thighs or drum sticks. Place the chicken in the oil and put adobo,cumin and Sazón with 3 caps of vinegar and rub into chicken well. Then Fry the chicken completely done then take chicken out to cool onto a plate. Now in same pot saute on medium high 1 diced onion and 2 diced Jalapeños and 4 garlic cloves till it is nice and brown. Now take all the chicken off the bone and add to the pot mixing all ingredients together. Then add your rice and the water it was in. 1 can of diced tomatoes and my favorite 1 can of Goya Roman Beans it is a higher level then Pinto beans. You add a hand full of cilantro 2 packs of Sazón con achiote then last add Adobo in a circle according to how many cups of rice. I cook 6 cups at a time so go around 6 times with the Adobo upside down then when you reach the 6th time throw a sprinkle in the center of the pot for good luck. Mix all ingredients again and let it come to a boil mixing again and cover do not touch the top for 30 min. Buen Provecho You will love it eat it with cheese and Jalapeños melted in a Tortilla rolled up

Great basic starter recipe as she calls it. Such a versatile dish. With my rice, green bell pepper sautéed in with the onion and garlic sets it off. Also comino (cumin), a little powdered garlic and powdered onion (I use both fresh and powdered) in with the chicken or tomato chk bouillon. Sometimes I like to add corn or small chunks of carrot, just depends how I'm feeling.

Hello ladies. Your rice looks devine. When i cook my rice i add a few more tablespoons of oil. I use chicken and tomato bouillon cubes and add a little bit of salt, garlic, and cumin. It comes out pretty good.
It’s nice to see other people’s own way of making rice I learned a few diff ways to make it and this one looks simple and yummy might try it too! I normally make mine with 2 fresh tomatoes half an onion and one garlic piece throw it in the blender with a little bit of water and blend add that to the rice after toasting in oil then add 2 cups of chicken broth and on top of that add a little of chicken bunion and the tomato bunion to give it a more red color :)
I've used Jasmine rice as well and it just as good. My grandma always added a splash of tomato sauce just to add a little bit of "color." I always found that a can of tomato sauce made it somewhat gummy. So I use tomato bouillon instead. Love your videos!

Thank you! I ended up doing the stove top version but adding a fresh diced Roma, and 4 Oz tomato sauce (2 Oz pato yellow can, and 2 Oz hunts) gave it the perfect flavor. First time ever making mexican rice.
My tomatoes were too ripe to use for this rice, so I used a half a can of tomatoes (15 oz) along with the tomato sauce, and it was the bomb! Tysm for this. :)
Looks wonderful! When I was young (long ago) all the women just added a can of Ro-Tel tomatoes. I guess still an option but I'd rather not today. Thanks so much for showing me the way without rotel.

I have tried so many different versions of mexican rice. This is the very best I have ever had. Was super delicious. Just found your channel and loving it.
When my kids was little my youngest was more picky then my other two so what I did I used half a teaspoon of garlic powder onion powder and yes chicken bouillon, however I have my middle son who luvs when I added green bell peppers half teaspoon of cumin and a bit of cracked black pepper and the fresh garlic and very fine diced onions and he liked I added stewed tomatoes and tomato sauce and I was shocked when he asked for Culantro or the Puerto Rican spices in it and I loved his idea so he always ate it when I made it but now my oldest doesn't like but the youngest will eat it if make refried beans with cheese in it..... So just another tip for anyone who may like to jazz up there Spanish rice / Mexican rice. Just up to you and what may interest you and your family. So I made all of this and made quinoa in my instant pot. I have braces and this is bomb in a bowl with no tostada. I'm Polynesian and this was the first time making rice uncovered AND not in a rice cooker, so I was a little skeptical. But all of your other recipes I've tried are money so I went for it. I have eaten Mexican rice in restaurants and wondered what the ingredients was for the rice and your recipes does look nice. My mother was not able to make rice correctly and turned me against it until I went to Thailand while in the military and learned that there was other ways to make rice.
Omg thank you so much making my rice your way came out sooo good my family all agreed it’s the best I’ve ever made! Although I did make it comfortable for my home my husband has bad heart burn with tomato anything so I used caldo de tomate, caldo de pollo, garlic powder to season. Super happy! 🤗
I like to add garlic powder (fresh garlic like u did) cumin, salt and a little pepper. Add 1-2 slices of jalapeños. Magic 😋 I don’t do the rice spicy but just a taste

For those with picky onion eaters, instead of diced onion you can use ring slices of onion and take them out later

You can also grate the onion and then they can't feel it and the taste is not as strong.
I do that 👍 I add ring onion and 1 or 2 garlics in half, and remove them after cooking 👌 my girls don't even know 😁😁👌

Cut up half a green bell pepper into big chunks and add right before water is poured. OMG!!! Takes the flavor to the next level.

Also comino (cumin), a little powdered garlic and powdered onion (I use both fresh and powdered) in with the chicken or tomato chk bouillon. Sometimes I like to add corn or small chunks of carrot, just depends how I'm feeling.

Hello ladies. Your rice looks devine. When i cook my rice i add a few more tablespoons of oil. I use chicken and tomato bouillon cubes and add a little bit of salt, garlic, and cumin. It comes out pretty good.

It’s nice to see other people’s own way of making rice I learned a few diff ways to make it and this one looks simple and yummy might try it too!
I normally make mine with 2 fresh tomatoes half an onion and one garlic piece throw it in the blender with a little bit of water and blend add that to the rice after toasting in oil then add 2 cups of chicken broth and on top of that add a little of chicken bunion and the tomato bunion to give it a more red color :)

I've used Jasmine rice as well and it just as good. My grandma always added a splash of tomato sauce just to add a little bit of "color." I always found that a can of tomato sauce made it somewhat gummy. So I use tomato bouillon instead. Love your videos!
I like that light red rice im still learning how to cook. I made raw burgers with burnt edges lol had to microwave the raw ones.

Thank you! I ended up doing the stove top version but adding a fresh diced Roma, and 4 Oz tomato sauce (2 Oz pato yellow can, and 2 Oz hunts) gave it the perfect flavor. First time ever making mexican rice.
My tomatoes were too ripe to use for this rice, so I used a half a can of tomatoes (15 oz) along with the tomato sauce, and it was the bomb! Tysm for this. :)
Looks wonderful! When I was young (long ago) all the women just added a can of Ro-Tel tomatoes. I guess still an option but I'd rather not today. Thanks so much for showing me the way without rotel.

My great grandmother always made the rice with alot of diced onions and it was legendary 😊
When my kids was little my youngest was more picky then my other two so what I did I used half a teaspoon of garlic powder onion powder and yes chicken bouillon, however I have my middle son who luvs when I added green bell peppers half teaspoon of cumin and a bit of cracked black pepper and the fresh garlic and very fine diced onions and he liked I added stewed tomatoes and tomato sauce and I was shocked when he asked for Culantro or the Puerto Rican spices in it and I loved his idea so he always ate it when I made it but now my oldest doesn't like but the youngest will eat it if make refried beans with cheese in it..... So just another tip for anyone who may like to jazz up there Spanish rice / Mexican rice. Just up to you and what may interest you and your family. So I made all of this and made quinoa in my instant pot. I have braces and this is bomb in a bowl with no tostada. Ladies y’all did an amazing job with this recipe I am going to keep it for my kids to hand it down to them when they have their own place. Just made the stove top version with your birria enchiladas for dinner and the rice was amazing!! I'm Polynesian and this was the first time making rice uncovered AND not in a rice cooker, so I was a little skeptical. But all of your other recipes I've tried are money so I went for it. Definitely a bit and it's going into the dinner rotation. Thanks so much for sharing!!! Boyfriend loved it. He packed up half for his lunch tomorrow before we plated dinner lol

I have eaten Mexican rice in restaurants and wondered what the ingredients was for the rice and your recipes does look nice. My mother was not able to make rice correctly and turned me against it until I went to Thailand while in the military and learned that there was other ways to make rice.

Omg thank you so much making my rice your way came out sooo good my family all agreed it’s the best I’ve ever made! Although I did make it comfortable for my home my husband has bad heart burn with tomato anything so I used caldo de tomate, caldo de pollo, garlic powder to season. Super happy! 🤗

I like to add garlic powder (fresh garlic like u did) cumin, salt and a little pepper. Add 1-2 slices of jalapeños. Magic 😋 I don’t do the rice spicy but just a taste
