Something else you can be doing, that feels much more lore friendly than sacking and razing, is occupying and gifting settlements to friendly factions nearby so they serve as valuable buffers for you. I've done this in numerous campaigns just as a part of a normal campaign. The AI will pay you good money for settlements that would otherwise be a big investment for you to upgrade and defend. This is especially useful for Bretonnia since you don't actually NEED territory to win the campaign. It feels pretty great and loreful that my Knights can come through, defeat the evil in the area and then restore the province to its rightful owners before going back to celebrate in fair Bretonnia.
This would have been really helpful for you in your Cathay campaign where instead of razing the settlements you took from the rebels you could have just gifted them to Miao Ying. This would have greatly slowed down Clan Eshin from ruin dwelling it so fast and it would have sped up the process of getting a proper alliance with her.

Taking it and then selling it on to a good new owner means that an enemy doesn't own it, gives you progress towards campaign completion (If they're an ally) and gives you some extra dosh to boot.

Ok, as someone who has played a couple of full "one province" campaigns.
Bretonnia rocks as these, and there is a trick to counterbalance the chivalry loss of sacking. Get 3 lords to run along your main army, maybe with some peasants or cheap knights. Never sack with them if you can avoid it, they'll get a bunch of titles and chivalry bonuses for winning battles or helping other bretonnians and only your main army will have a penalty to chivalry (that will probably be counterbalanced anyways with other positive traits).
Also, occupy settlements to inmediately give them away to your allies, strengthening them, gaining relations and staying at 1 province
My recomended factions for this memery are Repanse, Imrik with the Eastern Colonies or his starting province, any of the Ulthuan high elves, Aranessa and Noctilus (through cove spam, seriously this makes Sartossa fun to play).
Before the dark elves dework I'd have recommended them too but now it's A LOT harder to have something resembling an economy with one province, an army and a couple of black arks

Honestly, with the "gift settlement" system, you can finally have allies. Maybe not alliances, as the AI can still call you to wars were you lose Reliability, but you can make your own Factiontide now.
As Astragoth, I let Kholek conquer and subjugate everything in my north/north-east. Took the territory on my south to get a border with Drazhoath and keep him safe, so I could confederate him later. I expanded into the mountains in the east to take out Grimgor, and gifted a LOT of provinces to Zhao Ming, which got me a Cathay-Greasus defensive pact (and allowed me to ignore the east for the rest of my campaign).
Then I pushed south to get rid of Ku'Gath and zombie boi (who somehow always prospers there). Finally with all my flanks secured (north chaos, south Dwarfs, east Cathay-Ogres), I pushed west to take out the Dawi and Orcs, I plan on making a friend out of Vlad by giving him, again, a lot of land so he can push out the empire for me.
At Very Hard dificulty, it is now feasible to get a lot of safety diplomatically, there is no need to purge everything in the map so you can get better and more armies to defend your borders.
I know that it was not your intention with your Zhao Ming playthrough, but if you did a Total Charity: Warhammer, you could have gifted a lot of that land that you would just recover afterwards when you confederate, allowing you to push out of Cathay safely.

But in my RoC Daniel campaign I took only like 2 and a half province before I had to pucker up and do the Realms of Chaos things and I still did just fine while maintaining enough income to upkeep nearly 4 full stacks.
That got me thinking and this tall rather than wide playstyle is what I now play near exclusively. It's actually very enjoyable since, as you mentioned, there's a lot less land to worry about defending, ad much less micromanaging every turn. Just keep 1 or 2 armies to defend your lands while you go out there to -kill maim and burn- explore the world.

Vampire Coast also works very well for one province challenges. They get more money razing than sacking a settlement so they can get a very healthy money flow and all the extra money you get from razing settlements can go into upgrading your flagships which counteracts one of the major issues with a one province challenge, limited troop options.

I think this is why I like Warriors of Chaos so much. They basically play the same way you played Azhag. You really only want Dark Fortresses and the minor settlements with resources (which gives you buffs). Any settlement you don't want you can sell to your vassals, of which you should have a ton. It really takes a lot of the stress of empire management off your shoulders, and your vassals provide a nice buffer to enemies, both current and potential. Since the AI can no longer declare on your vassals (and your vassals can only declare war on you), they rarely do so once you hit a sufficient power level.
I played a Be'lakor campaign and found it to be a very fun smashy-grab-take, multicolored map-painting game.

this is how i finished my first legendary campaign, i was playing the wood elves in wh1 and i just sat and got a military alliance with the empire and bretonnia. razed settlements and got my amber trough the alliances, slowly getting my tree up to tier 5 to win the campaign "owning" more then 150 cities

Funny enough before i saw this video i had started a Katarin campaign and while i didnt stay to one province i also didnt expand a whole lot. I had like 3 provinces, and any thing else i sell to the other Kizlev factions to keep them as a buffer between me and some of my stronger enemies. Its working out great so far around turn 90

Next time do it with vampire Coast on Sartosa. Not only one province but one settlement. Or with Tomb kings, without the additional settlements your unit capacity is stuck at a minimum and you'd mainly be fielding skeleton warriors, that would be quite the challenge

What I've learned in my attempt at a Kairos campaign or a Repanse game is that you really only need a few core provinces. Buffing the rest up to help bolster your income is great, but as you spread out, having a few key provinces scattered around will help you be able to raise powerful armies where you need them, and then buffer provinces where it doesn't matter so much if the enemy starts taking them because you haven't put much money into them as is.

Vlad can kind of do a single province play with vassals. A combo of his skill tree, lahmian vampire buffs, and tech give a +75 relation with the empire. Vassal templehoff through combat and give him half of sylvania. Raid azhag to get dwarves on your side. Then just make a lot of cash, and use it to bribe people to become new vassals.

    That's almost playing Wh2 WoC 😂
In Wh2, when playing order factions, I usually tried to unite my realm (ulthuan, brettonia, mountains or empire) then sent expeditionary forces to help the others. Also used mods to tweak AI performance so evil factions do better, meaning there's lots to do to save the world.
Will probably do the same whenever I end up playing order IE in wh3, but so far, I've only got a Belakor one and it's a pokemon chaos tide. Was lots of fun, but building a drill completely side tracked me.

Maybe that will be the entire gimmick of Marienburg (aka Fantasy Venice, Games Workshop super creative as always). Dogs of War can be a DLC, Marienburg will be included, your objective is to survive through trade and vassals (just how Venice plays in Civilization games). I think that would be a very good change for TW Warhammer, make things fresh. Even if I am not a big fan of the human factions in this game (saved by Kislev, they are cool), I would not mind the Dogs of War if they come along with Estalia, Marienburg and Araby
