American Pale Ale | Grain to Glass | BIAB All Grain Brewing

  • Here I brew a classic American Pale Ale with Centennial and Amarillo hops. The recipe is taken from David Heath's channel and he kindly shares all recipes on Brewfather. I brew this using the brew in a bag method using all grain and a mixture of hop pellets and whole hops. American ale yeast the rest. The result is lovely crisp citrusy pale ale.

    Original Gravity: 1.046
    Final Gravity: 1.009
    IBU (Tinseth): 47
    BU/GU: 1.01
    Colour: 5 SRM
    Mash
    Temperature - 65 °C - 60 min
    Mash Out - 75 °C - 10 min
    Malts (4.35 kg)
    2 kg (46%) - BestMalz Pale Ale - Grain - 2.8 °L
    2 kg (46%) - BestMalz Pilsen Malt - Grain - 1.9 °L
    220 g (5.1%) - Briess Carapils - Grain - 1.7 °L
    130 g (3%) - BestMalz Melanoidin - Grain - 26.8 °L
    Hops (174 g)
    13 g (14 IBU) - Centennial (Whole) 8.8% - Boil - 60 min
    16 g (8 IBU) - Amarillo 8.5% - Boil - 10 min
    16 g (8 IBU) - Centennial (Whole) 8.8% - Boil - 10 min
    16 g (5 IBU) - Amarillo 8.8% - Boil - 5 min
    16 g (5 IBU) - Centennial (Whole) 8.8% - Boil - 5 min
    29 g (4 IBU) - Amarillo 8.5% - Aroma - 15 min hopstand
    28 g (3 IBU) - Centennial (Whole) 8.8% - Aroma - 15 min hopstand
    Hopstand at 80 °C
    Miscs
    3.9 g - Baking Soda (NaHCO3) - Mash
    5 ml - CRS/AMS - Mash
    2.6 g - Calcium Chloride (CaCl2) - Mash
    4.3 g - Epsom Salt (MgSO4) - Mash
    7.8 g - Gypsum (CaSO4) - Mash
    0.77 g - Sodium Metabisulfite (Na2S2O5) - Mash
    Yeast
    12 g - Fermentis US-05 Safale American 81%
    Fermentation
    Primary - 20 °C - 10 days
    Cold Crash - 2 °C - 2 days

    David Heath knows his stuff. I think he is a master brewer. Cannot go wrong with his recipes and you certainly didn't. Looks and sounds like a good beer

    Nice! It looks like a great beer. I haven’t seen melanoidin used a lot so it was good to see the impact it had on the finished product. Cheers!

    Looks great, thank you for the video.Just curious, did you leave all the hops in the kettle even through the whirlpool? That kettle looked mighty full of bags.

      I did yes, I just fished them out towards the end of the cooling. They'd be in there until the end if you don't use a bag. Cheers!

    Good stuff as always.................quick question, if there is a 23 lts recipe and you only want to do half that, 11.5 lts, can you just half all of the ingredients ??

      Thanks. Yes, absolutely you can half the ingredients. Alternatively, you can easily scale recipes in brewing software like Brewfather. Cheers.🍻
