Since majority of Rico's Lechon shares were bought by Manila-based firm (operates KPUB BBQ) recently, you can now find Rico's Lechon in BGC in Taguig. Soon, it will open more outlets all over Manila.
You dip the lechon first in the souce, then put the lechon on top of the rice, then you pick the rice, make it into a ball and push it up with your thumb in to your mouth.
I've followed you guys ever since you came to the Phils. & I really appreciate you both for trying to get to know our culture & food at each location. With filipino food, you dip your meat in the sauce first & then put it in your rice, this way you won't get rice fall in the sauce. 😊 Filipino food is meant to be eaten with rice all the time, unless it is a dessert.

Take a small portion of lechon and dip it in the soy sauce mixture. 3. Put your "sauced" lechon on top of the rice (like a spoonful). 4. Gather them all in your fingers (all except the little finger), eat, and be merry! As for the balut, no pressure! :D You don't have to do it. I'm Filipino and I DON'T eat the duck (sisiw in Tagalog); I eat everything except that. Balut's really tasty, especially the soup of it. Best eaten when hot.

That is not a traditional lechon. That is just the belly part of the pork and either grilled in oven or deep fried😊 the 1st lechon you ate was the traditional lechon
It's crispness may varied from or depends on the charcoal and fire you put. It does not mean all the time it's not newly cook but sometimes it's how you roast it the temperature you used. Just saying 😉

Yes, agree here. I only eat Penoy, egg without the embryo, not balut. I did eat balut once in my childhood when my parents encouraged me to close my eyes, suck slowly the juicy stuff and eat the embryo right out...well, it did taste 😊 good.

The embryo inside can be between 18 to 21 days old. 18 days old embryo is very tiny and bigger yolk. 21 days old Balut has bigger and well-developed chick and very small yolk. The white stone is the hardened egg white which you may discard. When you eat balut, break the pointee end (marked x) gently and peel off the shell to reveal a soupy substance. You shud sip the soup first without putting a salt and it is in itself, already very delicious. After sipping the soup, drizzle some salt and vinegar on to the peeled Balut and get some bite. Balut is really delicious with no smell at all. The chick is very clean because it didn't eat any solid food yet. The intestines are still empty

6:06 the sauce is FOR the lechon only but if you want you can mix it in with the rice, dipping it without using a spoon to scoop it up is hard
Its cheaper than the more traditional lechon its cooked differently

It's oven grilled. Deep fried belly has different looks on it. Its a small food stall in a mini food park. Nonetheless its still lechon
