That's a great question! *Osoba* (person) is a formal word mostly used when we talk about how many persons a train/elevator fits (maximum: 6 osob), or how how many people the reservation is for (stůl pro dvě osoby). *Člověk/lidé* can mean human(s) or person/people in informal language (Je to dobrý člověk. Znám hodně lidí), sometimes also as a general reference, "one" (Člověk nikdy neví - one can never know). I hope this helped.
