  • This is a real Royal favourite Easy to make Coronation Chicken using Cooked Chicken, with a creamy curry mayonnaise sauce infused with mango, apricot and spices - usually eaten as a sandwich filler but can accompany salads or on a jacket potato. Ready in no more than 10 mins this delicious fruity mild curry-spiced chicken dish is a real Royal favourite!

    Ingredients:
    500g cooked chicken breast, bite-size diced
    7 tbsp mayonnaise
    3 tbsp Crème Fraiche or Greek Yoghurt / thick cream - creamier taste
    1 tbsp Curry powder of your choice
    1/8 tsp ground cinnamon
    1/8 tsp salt
    1/8 tsp black/white pepper
    3 tbsp mango chutney
    2 tbsp golden raisins / sultanas
    3 dried apricots, finely diced

    👍🏻 Reminds me of my school days and my mom's cooking. In summer on a roll with a salad, and in winter on a roll under some cheese toasted in the oven. And every now and again as a filling for a baked potato. Those were the days!

    Works with chicken thighs as well, getting chicken breast perfect even with poaching can be hit and miss. The thighs are more forgiving and have more flavour. We have this pretty much every week, great way to use up leftover sunday chicken/pork for mondays packed lunches, adding some crispy bacon crumbles adds extra even it does sog abit from the mayo. if you blitz the apricots and sultanas small enough before adding to the mayo and yoghurt the coronation chicken sauce works well as a squeeze sauce with ham and pork as well. We reuse ketchup sqeeze bottles for our sauces due to the larger nozzle. Thank you for posting the recipe, Take care, God bless one and all.

    I remember my mother's chicken ala king. I have never been able to recreate the same as she cooked it. I haven't had coronation chicken for years so I will make this for lunch one of these days. I like the idea with yellow Saltanas.

      I love this mate - i eat it many times its just a great way to use up chicken. Chicken Ala King - i will make that in a couple of days haven't had it myself in quite a while

      In fact ive just looked in the fridge have a boat load of mushrooms so its on! What did you eat it with Roger?

      @@BackyardChef My mother's father was Indian so we always had it with rice. But I would be interested to know what you would come up with.

      @@rogerparkin843 Rice, Pasta, Mash Potatoes munch it with all mate - rice was the way to go the Americans probably not all but hey ho Pasta - and Chopped bell peppers - where as Mushrooms - some onions cooked off with some butter - make a roux - standard milk, flour and some a pinch of nutmeg - peas sweet corn - just for colour and that mild flavour. Many make it all sorts of ways.

      The only draw back would be sherry that seems to have been standard a few years back - i will use 1 tbsp of apple cider vinegar - as you know from my vids i use apple cider vinegar in many

      In a restaurant I agree at home who cares if its red green blue pink or black as long as its clean and ready to use - Thanks for your observation Chris - I agree in a work place!
