(We have been divorced for several years now, and we both live in the US -on opposite coasts! Haha!) While living in England I learned how to cook and bake many, many wonderful dishes, and had the opportunities via friends to collect several more recipes and loads of cookbooks! Coronation chicken was one of those dishes for which I asked one of my dear British friends the recipe! It is still a dish I make often, whether it be the warm casserole type dish, or the cold salad version. I’m originally from the Southeastern US, so this chicken salad goes over a treat at potlucks and brunches/lunches with friends -I am always asked for the recipe, which I happily share! I cannot wait to try your recipe, as it has more fruit in it than mine, and I think it will be delightful! Actually, coronation chicken was selected for the Coronation, and the recipe widely published in women’s magazines well in advance, because the very last food rationing was lifted a few months before and all the ingredients - which broadly represent the far flung realms of the Crown at that time - were available. But most food rationing ended years before. The idea was that the public could eat the same recipe as that served at the banquet for the new Queen, so it had to be easy to shop for and make. Coronation chicken wasn’t really a new recipe, it was an updating of the Jubilee Chicken made for George V in 1935. Jubilee chicken didn’t catch on but coronation chicken’s association with Constance Spry, the etiquette expert, and the huge publicity, catapulted it to be a national favourite. It’s mostly used today as a sandwich filling, all the supermarkets have their own versions.

This reminds me of the time when my adult daughter chose for her Senior project to throw an Afternoon Tea for the teachers and staff at her high school! Of course, with her schedule I made the entire menu and decorations (Tea pots, tea cups, spoons, plates, ect.) everything was a hit with the faculty and she received a A+++ and recognition at her graduation commencement! Glad I took pictures for memories.

That was very wholesome and enjoyable! Coronation chicken sandwiches and salads were pretty common on afternoon tea menus in Hong Kong. Never really clicked that it was an actual royal dish so I assumed it was a title added to make a sweet curry chicken sound fancy :D

Im actually quite curious. The Queen doesnt do garlic i would assume due to risk of garlic breath during formal engagements. Why does she allow raw onion and not ban that for the same or similar reason? Is there any special reason behind this?

I think teas should be a thing for middle-school girls and up. I attended tea with my grandmother a few times, and had to wear gloves, a hat, and probably my patent leather shoes. The table decoration flowers were always amazing too.
When I was a little girl we would always have them the week leading up to a wedding. It wasn't a shower it was strictly a social event. It was always so exciting because you got a new dress, new gloves new shoes, etc. I lived in fear I was going to break a piece of China.
Reminds me of my mum's recipe for corrination chicken. She would serve it with a rice pilaf molded in a bundt pan with chicken salad served on top. She put cashews in hers. :-p

I first tasted a coronation chicken sandwich as a teenager back in around 1999 at a place called Scott’s Delicatessen in Earlestown. It was my new favourite butty.
I first had coronation chicken in Glasgow when I moved there for my postgraduation It's now one of my all-time favourite sandwich fillings Sometimes I'd go and get the coronation chicken sandwich filling and eat it all by myself before putting it in a sandwich. It's so good Mango and chicken is a very underrated combo
Amazing. Remember first time I had coronation chicken. It was in a wrap at a Princess Trust event at Buckingham Palace in the garden. Never had it before as thought it would be too sweet but how was pleasantly surprised. Definitely making this tomorrow!
