I've found most people change the "Ee" sound because of middle tongue tension. What you demonstrated was an "Ee" based off the "eh" sound which flattens the tongue into the right position.

I have poor pitch. I can not match a note for the life of me. Any tips on that kind of thing?
I like the going from one tone to the other and finding the right spot. The guh sound (in Gee), always causes tension for me. I need steps even before this point to even do this without tension. But not your fault. Soooo many teachers do this. There are steps to do before even vocalizing to make sure the sound comes out without tension (that's my biggest issue and not a lot of videos on that).
It's always important to be in tune with how certain exercises make you feel. Trying different adaptations of this exercise can be equally as helpful. You could try softening your attack on that guh sound and adding some air flow.

I can do these exercises easily but i have trouble applying them to actual songs
Hey Hayley. That's totally normal. It just takes practice. Try singing the melody of your song to one of the exercise sounds; "Gee" for example. Then sing one word of your song and toggle between "gee" and the word of the song. Try to keep the same tone quality between the two. Listen and get a feel for it. You will get better quickly!

Won't the gig gig exercise raise your larynx? Do we want a neutral larynx or no?
Yes we always want a neutral larynx. The G sound should come from a closing of the vocal cords, not from tension in the larynx.
