Obi-Wan Kenobi adapted 12 years before his duel with Dooku and his duel with Dooku had absolutely nothing to do with him changing anything with his form of lightsaber combat
Similar to Darth Vader Obi-Wan fighting style is quite unique. After the death of Qui-Gon Obi-Wan saw the weaknesses in form 4 and took upon himself to learn and master form 3 but also with the limitations of a offensive that form 3 provides Obi-Wan used what he learned from form 4 to fill in the gaps. Obi-Wan also took in some of the basics of form 1 (body zones) to help him in some areas as well, like his fight with Vader on the Death Star. There is a possibility he might have a very very small amount of form 2 in his fighting style but nothing to obvious. Because you got remember even Qui-Gon used mostly form 4 his master was Dooku and I'm sure Qui-Gon picked up a few things from form 2 especially later on when he was getting older. But obviously it wasn't enough to prevent his death.

Obi-Wan had no choice in becoming one of the best all-round Jedi duelists. Qui-Gon inadvertently taught him a last lesson on Naboo (he had to die to do it...goddamnnit!!) but nonetheless, he taught him that form 4 wasn't the best form, (especially because Kenobi knew of what was likely coming) and knew he had to do something or quite frankly...end up dead. This is the hallmark of a truly intelligent person, _adaptation_ . He would have put in a lot of study and research before doing something as drastic as changing his fighting form. No small task! He would have had to first learn form 3 (form 3, right?) so, learn form 3, then master form 3, then use it in real combat situations and finally (whew!) realize that if he combined parts of his original form 4 with his current form 3, he had an advantage of _surprise_ in almost every duel after that combination was also mastered and found that he could do things (he prolly didn't even realize!). @@MrKevin486in the RotS novelization Obi Wan did in fact match Dooku with the blade, which is why he used the force to knock Obi Wan out of the fight. Dooku noticed how fast Obi Wan had become and how his defense was nearly unbreakable in saber combat. He knew he couldn’t hold out against both Obi Wan and Anakin so he used the force to knock Obi Wan out of the fight, resulting in his loss to Anakin as Anakin grew enraged and struck at his form 2 blade work with extreme force. By RotS if Sidious and Obi Wan ONLY fought with sabers, I think Obi Wan could have held out for quite some time. With the use of the force though, Sidious would have over powered Obi Wan.
