Macadamia Mahi Mahi Recipe

  • Chef Jason Hill shares this delicious macadamia mahi mahi recipe in this episode of "Chef Tips."
    Inspired by a recipe he discovered on the Hawaiian Islands, this macadamia crusted mahi mahi is delicious served with a lemon and caper butter sauce, rice pilaf and sauteed bok choy.
    The ingredients for the macadamia nut crusted mahi mahi include 4 mahi mahi filets, 1 batch of Jason's lemon-herb marinade (optional), 1 cup flour, 1 egg mixed with 1/4 cup coconut milk, 3 cups panko bread crumbs, 1 cup chopped macadamia nuts, 1 cup grated parmesan cheese and 1/4 cup fresh chopped basil.

    If you leave the sauce on it for a long time, it will soften the crust. Kind of like the way milk will soften cereal.

    This looks so tasty! I'm not too much of a fish person but this looks really appetizing even to me. I do have one question though. Mahi-Mahi for some reason is really hard to find for me, so if you had to recommend a substitute fish what would you suggest I use?

    Most mild white fish will work with this recipe. What fish is easy for you to find?

    I might change out the Parmesan cheese for toasted coconut to give it a more tropical flavor...drizzle with some beuree blanc(white) sauce and top with a little tropical fruit salsa! Yum! Great recipe...can always give your own touches for your personal signature! Thanks so much!

    Hola Chef, how are you? I hope everything going well. I have some questions and I hope you can help me. OK 1st I have basa fish, can I do this recipe with this kind of fish? 2nd can I use walnuts?? 3rd and last, I only have almond milk at this moment, but I'm not sure if I should use this one. I think that's it ... I'm sorry for asking so many questions but actually I was going to cook the fish right now I had it on sink but I saw you recipe and I'll wait for your answers.     @lNOMAK I think I'd recommend using it for fairly oily fish first and foremost. Like mackerel, mahi mahi, that kind of stuff. But I suppose you could use it on almost any friable fish come to think of it.

    The monkfish tail, aka poor mans lobster, would work very nice with this recipe. Trout would work too as long as you presented it on the plate skin side down.

    basa fish would work. Walnuts and almond milk may work, but I think the walnuts would over power the flavor. Macadamia nuts are much more mild and work best.
