dave....... great recipe! i'm not at all a fish guy but this is fantastic. i thought i'd get creative and just stumbled on your video. the sauce didn't quite turn out right but was acceptable. with practice, i'll get better at it. made this for my wife an i and it turned out perfect. it's been a few weeks and i'm in the process of trying another shot at it. thanks, mahalo
Looks nice and simple, I'm going to try it tonight with Pacific yellowtail. I have a bunch of it. I usually grill or sear it so I'm eager to try something new. I'll let you know.

That's a great question...a few ideas. Your thought about cutting with water is a good one, but I'd probably use chicken stock, as it has more flavor. You can also just use less juice...more butter. Finally, you could add a bit of some other less powerful juice orange maybe....

There's not real substitute for the wine...but you can do just use some chicken stock instead.
I would have done a coat of flour and egg before crusting the fish. Dry crusting fish has never worked for me.
