plant based what I eat in a day + how to make tempeh

- Hi guys! So another what I eat in a day video 💚 Plus I'm also showing you how I make my own homemade tempeh. See my notes down below.
Homemade Tempeh
250g dry soya beans (split & hulled)
1 1/4 tbsp rice vinegar or any white vinegar
1/2 tbsp rice flour
1g (1/8 tsp tempeh starter)
1. Soak the beans overnight
2. After 12 hours rinse the beans until the water runs clear
3. Now let the beans simmer for 20 minutes together with vinegar (they should be cooked through but not mushy)
4. Then drain the beans but do not rinse with cold water. Place them in the oven on 120C/248F for 10 minutes (they should not burn or get much color, just dry out) and then let them cool down
5. Then add them to a clean pot, add the rice flour and tempeh starter, mix throughly
6. Add the soya beans to ziplock bags and make holes with a clean needle (important that it's very clean) with 1cm apart. Flatten the soya beans and place on an tray, like an oven tray or cookie tray.
7. Now either place it in the cooled oven with the light on, check so that it is 29C/84F or place it in an electric blanket, over a water heater etc as long as it is 29C/84F
8. After 12 hours you should see some signs of fermenting, check the temperature, if it is higher, open the oven a little bit or remove blankets
9. After 31-35 hours it should be done! If black spores are developing that is a sign that it's done and they can be eaten. Store it in the freezer for months or in the fridge for 5 days

We have a yellow split peas based tempeh made in my town that tastes so good. But soybeans tempeh are very yummy as well.
Almost everyday I eat that bcs so cheap here 😁
I've always wondered how you make tempeh! Not sure I have the patience to try this but it's very interesting. The Mexican potato bowl looks delicious!

Making my Tempeh since some months now and I love it. I tried different Legumes like mung beans, black beans, azuki beans, chickpeas. Chickpeas is my favorite! I prefer soaking them for 24 h, followed by 24 hours of sprouting. After that, I steam the chickpeas, let them cool down and finally I start the Tempeh-process
The flavor is sooo different and better with homemade! I've ben wanting to try with chickpeas, that will be my next project 🤓

I would not be confident enough in achieving a safe level of mould - I am more confident that food grade tempeh is within safe parameters. (People with immune or autoimmune issues should also be aware of this as mould can be a real issue for their system so it’s not worth risking in an uncontrolled home environment) But still very interesting to see! 🤗
I've made chickpea tempeh many times but never soy. Thanks for the tip on buying split soy beans, def need to try this.

No I have never tried making tempeh. What is the difference between tempeh & tofu? because they are both made out of edamame or soya beans ( soya and edamame beans are both the same thing). Love 🥰 the What Alexandra ate in a day video and the food is awesome. Love 💕 Alexandra.
Tempeh is the whole beans that have been fermented :) Tofu is basically processed mixed beans, less fat as well. thank you 💕
I cannot get mine to look that way I’ve had it in my Insta pot on yoghurt setting for three days and it has hardly changed at all. This is my fourth batch of doing this what am I doing wrong

Yeah sure! Here it's more expensive and it's pasteurised, I prefer the flavor of fresh :)
@@AlexandraAndersson cook it with coconut milk and give it tamarin and little bit chili pepper .. Tempe is knowing has the same benefits as natto Wich is clean your blood vessel and good for heart too but anyway love ur cook.. so inspiring me
maybe use a vacum bag sealer for the tempeh?
Good idea but I think the tempeh needs some air or room for the mold to grow :)
