I left Mumbai in 1999 and have been searching for an authentic pav recipe for the last 20+ years. While I doubt the pav walas brushed their pavs with milk or butter (maybe they used refined oil), I can safely say that this recipe is the closest match to what I saw and ate in Mumbai as a kid. Thank you so much for this recipe.

No sir, everyone is misisng Mumbai pav in US. Ingredients are different there. I am actively looking for this recipe because I have the same craving. You dont get this pav anywhere.

in bombay i never saw ladipav so tall ... they say in pav bhaji pav plays equal role in bringing taste so hope that this will have same taste as bombay pav's ... i always thought that ladipav waallah's spread dough on bottom of tray and ran a knife for portioning but here you are saying that individual potions are made one at a time by hand and then left in tray to rise some more ... thanks for all these details which we newbies who never watched the process first hand would never have known
