Very detailed instructions and Pav that actually looks like Mumbai Pav. A lot of Pav recipes make Pav that looks much thicker like bun. Thanks for the wonderful recipe!!
Thank you for sharing this recipe. Tried today with unbleached all purpose flour @450°F for 18 min. Bread still remained raw within. It was quite chewy. Was expecting soft and light bread!

Hi prashant ji, thank you for your comment and precise observation. I have to do that magic as my oven is double decker. So I shifted it below aft 9 to 10 minutes for evenly baking. While doing in regular oven no need of shifting ( as it is single deck) The recipe is tested and can be done in regular oven if steps are followed correctly. I am happy to know you liked the magic part .🙏

Nobody wud have told you so I am telling... Yeast too has different taste when you buy from market. Hence the bread in mumbai tastes different from one made in hyderabad , Delhi, Banglore, Chennai Bakery.
Yes ,that could be one of the factors apart from difference of water, maida, used in recipe and age old technique of baking pav by Mumbai pav valas. Good observation 👍

mine is a double deck oven. after 7 minutes i shifted tray below.( for even baking ) i forgot to mention this in video. but in single deck oven. no need to do anything.

I tried making Laadi Pav and got very good results. I was craving to eat Mumbai style Laadi Pav since last 15 plus years. It's not possible to get same taste of pav/bread here in USA. Tried your recipe and it was awesome. The result was fantastic. Just a small request, had very hard time with measurement of ingredients in weight. Since most of us don't have weighing machine at home it will be very helpful to provide measurements in teaspoons, tablespoons, and cups. But eventually awesome recipe. Thanks, Manish Modi

Hi, pls use normal maida , add gluten powder, ( you can add 10 GM's in 1 kg) , and as mentioned in recipe pls add Bread improver. if making for home purpose no need of bread improver

Hello sir seen best recipe of ladi pav so far will definitely try. Have to clear some doubts.. 1. I hve commercial one deck oven so what will be the temperature setting of both rod in this? 2. For commercial purpose when to add bread improver? 3. Shelf life of this pav?
hi temperature should be 250 degrees for both rod bread improver pls add initially in dough. before adding activated yeast shelf life is one day to improve shelf life you may add preservative ( as directed )
Dev sir. I am diabetic patients. Sugar ke badle stevia dal sakte kya. Agar yes to kitni use karte kya. Honey bhi hai subtitles. Pl reply. I know you are great chef. I saw your program on tv.
Sugar is actually needed only for yeast activation. Otherwise there is no requirement. Instead of sugar pls add 1/2 tsp honey while activating dry yeast. Rest recipe as it is. No need to add stevia. Thank you for writing to me 😊
Made it today! I always followed the recipes that had milk, but happy to see your recipe which matched more to the local bakery ones I saw. What oil do you use to coat the pav? Does only using water and no milk give it better shelf life? Thanks again for such a wonderful recipe.
Thank you for your comment. Yes it is a local way of pav making. No need for milk unless it is a sweet pav or bun with tutty fruity. I use refined sunflower oil.

When you put the tray of pavs in the oven, you put it on the 1st shelf. But when you took it out, you took it out from the 2nd shelf. Please tell us whether we should put on 1st shelf or 2nd shelf. Best wishes from New Zealand.

Fantastic recipe. works every time. Quick Question: I live in US (california), so rise takes time. I sit ok for second proofing (after making balls) to rest for about 1 to 1.5 hours?
Hi Shama ji, I think you can extend proofing time by 10 to 15 minutes. Try to keep it in bit warm place( if possible near any heat source). It is observed that if proofing time is too much , pav become flat. Hope this helps
@@DevsKitchen thanks. I actually kept it for 1 hour yesterday and seemed great. If, I don't keep for longer then the pav ladi has holes in between pavs ( which to means that they have not risen enough). Also, first proofing was 2 hours for me. Will try to keep near heat source next time to see if it goes faster.
Sharmaji.. I also used to face this probblem when i came yto USA. Nowadays, I preheat the oven at 170°F then press cancel and then put the dough for 1st proofing. It is done in about 40min and same way 2nd proofing in 15-20 min

250 degrees C is not 450 F, it's 482 F.. so more like 500 F

I have eaten that todi fermented bread in Goa. It used to come in 2/3 forms. That used to smell awesome and test yummy.

Manish for baking recipes always weights are used to be more precise. As they say cooking is an art but baking is a science.

Hi, pls use normal maida , add gluten powder, ( you can add 10 GM's in 1 kg) , and as mentioned in recipe pls add Bread improver. if making for home purpose no need of bread improver

All your recipes are nice, clean and with clear instructions. I heard in commercial kitchens and factories they add glucose or milk powder to their bread/bakery products, kindly confirm if that’s correct. And if they add, can you tell us in what proportion do they add? Thanks

temperature should be 250 degrees for both rod
bread improver pls add initially in dough. before adding activated yeast
shelf life is one day
to improve shelf life you may add preservative ( as directed )

Dev sir. I am diabetic patients. Sugar ke badle stevia dal sakte kya. Agar yes to kitni use karte kya. Honey bhi hai subtitles. Pl reply. I know you are great chef. I saw your program on tv.
Sugar is actually needed only for yeast activation. Otherwise there is no requirement. Instead of sugar pls add 1/2 tsp honey while activating dry yeast. Rest recipe as it is. No need to add stevia. Thank you for writing to me 😊

Thank you for your comment. Yes it is a local way of pav making. No need for milk unless it is a sweet pav or bun with tutty fruity. I use refined sunflower oil.

When you put the tray of pavs in the oven, you put it on the 1st shelf. But when you took it out, you took it out from the 2nd shelf. Please tell us whether we should put on 1st shelf or 2nd shelf. Best wishes from New Zealand.

Fantastic recipe. works every time. Quick Question: I live in US (california), so rise takes time. I sit ok for second proofing (after making balls) to rest for about 1 to 1.5 hours?
Hi Shama ji, I think you can extend proofing time by 10 to 15 minutes. Try to keep it in bit warm place( if possible near any heat source). It is observed that if proofing time is too much , pav become flat. Hope this helps
@@DevsKitchen thanks. I actually kept it for 1 hour yesterday and seemed great. If, I don't keep for longer then the pav ladi has holes in between pavs ( which to means that they have not risen enough). Also, first proofing was 2 hours for me. Will try to keep near heat source next time to see if it goes faster.

Sharmaji.. I also used to face this probblem when i came yto USA. Nowadays, I preheat the oven at 170°F then press cancel and then put the dough for 1st proofing. It is done in about 40min and same way 2nd proofing in 15-20 min
