I did try it out yesterday and allowed the dough to sit in the fridge overnight. It’s currently resting on my kitchen counter and warming up for 3 hours, Then it’s bake time. I’ll check back a little later to let you know how my final product turned out. Thank you!! 🦋

I’ve tried a similar process with refrigeration and it didn’t rise much 🥲 I want to try your recipe now! It looks beautiful, and rose so nicely 🤩🤩🤩 and it’s true, we all make it slightly different, there’s no one right way to make it, which is my favorite thing about sourdough! I did play around, successfully- adding more starter and I soaked dried cranberries and added cinnamon. It works so well. So yummy. I will cherish this recipe forever. Thank you. 😊

Do I have to use a Dutch oven
nice and good to see a more simple and lower hydration; much easier to to work with. for me, i also let it raise on the table for 1-3 hours before shaping it. I find it continues the bulk fermentation for me and gets a little more air in it. then i preshape and shape.

I don't have a dutch oven.will it work if i use oven proof glass?
THIS sounds exactly like what I was looking for. My starter is ready for my first loaf and I'm thinking to start it tomorrow. We shall see! I have baked bread for years but never bothered with sourdough. I'm still not convinced. Time will tell.

@@SimplyHomeCooked I honestly didn't think my starter was making it rise enough. The dough seemed too dense even after giving it more time. But, I figured I may as well put it in the oven and see what happens.
I was surprised that it had a good rise and actually had crumb structure. So long story short, it actually came out well. 😀

Thank you! I have not tried baking this bread in a loaf tin so I am not too sure how it will turn out. If your loaf tin has a non-stick coating I would not recommend placing it in the oven at such high temperatures of it could break down the coating. I hope that helps!
Is there a reason for no bulk fermentation?
8:30 the cover that came with your banneton, you can use it as the bottom linen as well, that's how we use it and flour the linen and plop the dough inside to proof. It makes it super easy to get the dough out.
If you use the top (as linen) in the bowl under the dough what did you then use as a cover please.

Watching from Lancaster County, PA. I hit the like button and subscribed! Have one batch going on right now. Stretched twice. Learned a few things. I was putting flour in and ran out of flour from the container. Went to get a new bag and the scales went to zero and wasn't real sure what I had. Also I forgot to put salt in when mixing. I put it on top before I started stretching. Your video was very entertaining!
Made a loaf today it turned really well! (For the first time!)

May I ask what starter ration you used? 1:2, 1:5, 1:8?
I haven’t been quite 8 hours so I’ll give it more time in fridge. But I peeked and it hasn’t changed sizes in about 7 hours in fridge. Is this normal for the overnight to not have risen?
What is bread flour? I use either self rising or all purpose flour

Mine looks pretty much the same as yesterday. Do you know why that could be? (I have no banneton yet but used a glass bowl with a pattern towl)
Hi Leah, the rise of the dough could be altered by the temp of your fridge. I wouldn't worry too much. As long it rises a little more before you bake it :) Let me know how it turns out!

I have a question though but it’s about the brioche bread lol, I have the Bosch mixer you used in that video so that being said… you mentioned in that video when it was time to turn up the speed to mix it on high… can you please tell me what number that speed is? Is it 2, 3, 4? I know you made this video more than a year ago, I just started baking bread several months ago and going through UA-cam trying several recipes. I came across this video and tried it, well 600 grams of flour was about 50 grams more than necessary, but then again I'm in Lubbock, TX, the panhandle area, "Go Texas Tech Raiders." Anyway, I was wondering if you've figured out that wasn't a cover for the proofing basket yet! Wondering if you tried putting it in the basket and flouring that well before putting your dough in there, just asking! I'll be trying more of your recipes soon, I'm about 2 hours from placing this one in the oven. Also, I'll be adding a couple ice cubes into the Dutch oven when I put the cover on and placeing it in the oven. Thanks...
My dough Always sticks..so now..I spray the basket first with avacado oil..then Add the flour..rice flour and any flour..And plop..no more sticking👍

More question. Incase our starter isn’t strong enough, as a backup could we sprinkle a dash of active yeast?
I would not recommend adding yeast to sourdough bread.
How long do we preheat the Dutch?
Place the pot in the oven when the oven is off. Then turn it on. Once it reaches 450, its all preheated.
How many quarts is your pot? I have 2 different sizes and want to use the one closest to your size.

Hi again, the bread came out too dense, the taste was on though. I fed the rest of the loaf to my chickens. I'll keep trying until I get it right. It's kinda funny that I've been baking bread for most of my life and never tried sourdough.@@SimplyHomeCooked
Mine didn’t rise at all in the fridge. I stayed up to make sure I did the 6x folding and everything. I need help. I put it on the counter. Will it rise? My starter was strong !
It's not supposed to fully rise in the fridge. You need to take it out to room temp to rise fully before baking.

That little "hat" is actually a baneton liner you line the baneton flour the liner then add the dough.
Yes, I know. But I like the pattern of the baskets to be left on the bread, so I don't use it for its originally purpose :) You are welcome to use it that way if you prefer.
Can anyone help me figure out when I get my bread out of the refrigerator before I bake why the top of the bread is hard and cracked on top.I flip it over before I put it in the oven to bake and it seems OK but I just was wondering if I was doing something wrong.
I think I've seen other people use plastic wrap in the fridge, to help prevent this.
I made this bread with my rye starter...probably shouldnt have because the crumb isnt that good and the loaf is just really small. I will try it with another starter with another kind of flour
Question for anyone--I will finish stretching cycles at 11:00 am . Is there any way I can shorten the next steps, fridge time, set out time, to get to baking tonight by 9 PM? I work tomorrow, leaving at 6am and not home til 8pm. Not sure how to do the final steps with this work schedule I have. Any help today will be greatly appreciated!
Once the stretching is done and the bread is in the basket, you can proof for about another hour and bake it right away! I hope that helps!

I don't mean to be critical but the cloth that you put on the top actually goes into the basket as a liner. You flour the liner then add your dough and cover with plastic wrap or a cloth to let it rise.
You are correct, but some people like the ring pattern from the basket and so do I, so I placed it without :)
My texture is very rough
My dough was so dry...I could hardly pull it🤔
You can probably increase the hydration
I tried this recipe and unfortunately it came out quite dense. I enjoyed the recipe's simplicity but I really feel it's missing the crucial step of a few hours at room temp before going in the fridge.
I am sorry to hear that. The dough does spend some time at room temp when you do the 6 stretches. I wonder if you needed to add a little mote time to proof after the fridge?
I like the idea of 600 g of bread flour, that means a larger loaf ultimately. But, I feel like the starter amount and the water amount is too low for that much flour. I did a 500 g bread flour with 150 g of starter and 360 gram of water, I think the hydration was about 72%, came out great of course. I just want something slightly larger and I thought this could be it, but I think it needs more of those two factors
This sourdough bread is not hard as a rock.
The method is not too complicated but if you want us to follow your recipe then give us at least your room temperature.
Love your recipe and no you don't need a kitchen scale, by saying that you will keep a lot of people from trying to make bread..

Be careful Sourdough from the grocery store is not real sourdough. They use yeast and add sour flavor so you don’t get any of the health benefits from it. Usually real sourdough is about $8-10/loaf
