Hello friends! Today I present to you an easy and delicious eggplant pasta recipe! Quick and easy recipe perfect for lunch or dinner that the whole family will enjoy. Eggplant Pasta is a delicious and satisfying first course that anyone can prepare without problems following my video to the end. For this recipe I used tagliatelle but you can use the type of pasta you prefer. In a few minutes and with a few simple ingredients you will prepare a simple and very tasty pasta! Try this easy and delicious eggplant recipe and you will be satisfied!
Ingrediants:
300 gr of pasta (tagliatelle)
2 eggplants
1 onion
2 cloves of garlic
300 ml of tomato sauce
Salt and pepper
2 tablespoons of cream
Olive oil
20 gr of Parmesan cheese
Parsley

Cooked it today. Added chopped green and red capsicum, needed to use them and a green chilli and black olives and 6 garlic and the cream just before the pasta. It gave it that bite and extra food. Loved it. Really happy I cooked a nice meal.thanks

Ti dico un suggerimento, l'aglio che usi...togli l'anima al suo interno (risulterà più digeribile). Con un frullatore ad immersione puoi frullare qualsiasi cosa, in modo che ci sono alcuni ingredienti ma non si vedono. Buon proseguimento

@@cavallaro1975 ma infatti nessuno ha mai detto che è una pasta alla norma,ma è una pasta alle melanzane,se dentro la pasta ci metti il guanciale vuol dire che perforza è una carbonara?🤡

I just tried this recipe. It was wonderful! FYI, Trader Joe's has nice big packages of organic Papparadelle at a good price, which would go well with a robust sauce like this.
I ended up with lots of leftover eggplant. The two I bought must have been bigger than those used in the recipe.
Be prepared for a bit of a mess!
I made pasta al limone with that Trader Joe's pappardelle and it was great. This looks delicious as well. Is the mess worth it?
They did seem a bit smaller than the ones I get for eggplant Parmesan.
i used one fairly large eggplant and found it exactly enough.
