I’m new to making berry liquors. I’ve recently made limonchello, strawberry, sour cherry, grape, blueberry, orange and melon. My two favourites are blueberry (sweetened with honey) and raspberry but the raspberry is truly amazing! You are 100% correct about the raspberry! Also, I use frozen berries for the blueberry, raspberry and strawberry liqueur and they still taste amazing.
I usually fill a jar almost half full of 80 proof vodka, pour in about half that much honey and organic sugar, swirl and let it sit until that dissolves, then fill the jar with raspberries, let it sit a month or two, and then pour (or sip) the liquor off the top as needed. When that's all gone, I eat the raspberries with honey and cream. I never measure and it always comes out delicious! I also strain raspberries through a big sieve, add honey or frozen juice concentrate to sweeten, and freeze in small jars. Thaw that in mid winter, pour over ice cream, or add cream and drink for a powerful burst of flavor!
......and your chickens will love the dregs, hic.......this works with all types of fruit/veg. We made some one time form celery, carrots, apples and orange, interesting combo. TNX for sharing the tip about 100 proof. I'll do that from now on.

Smaller bottles as gifts? I want the whole thing. Not sure i understand the purpose of the second 2 week wait unless you plan on filtering/decanting it again.
What is the ratio of fruit to vodka? How much fruit (in cups or ounces) to the 4 cups of vodka? I'm thinking wild blackberries might be as good as the raspberries!

I got the 2 cups raspberries , 3/4 cup sugar. But not the amount of vodka. Bottle looks smaller than 1.7?

Approximately 6 cups. It's 1.5 lbs per the recipe.

During the second 2 weeks, the alcohol mellows. It loses its bite and becomes deliciously smooth.

It's usually measured in pounds, but it's about 6 cups give or take. Great idea to use blackberries!
