Oh, Ruby Coffee! They do have a good blend for espresso milk drinks. I've had their roaster's choice subscription for three and a half years. Visiting their roastery in a little village in rural Wisconsin is such a delightful experience. They don't have quite as light and intensely fruity/floral coffees as Manhattan or Sey, but all of their stuff is consistently good.
this would be amazing at the end of a high end tasting menu dinner. 10 food courses paired with wine followed by 4 small dessert courses paired with coffee

Looked well executed! I wonder if a “brunch w/ coffee pairing omakase” would be a more practical idea. I feel like some people can be too fatigued with multiple desserts.
