    Oh, Ruby Coffee! They do have a good blend for espresso milk drinks. I've had their roaster's choice subscription for three and a half years. Visiting their roastery in a little village in rural Wisconsin is such a delightful experience. They don't have quite as light and intensely fruity/floral coffees as Manhattan or Sey, but all of their stuff is consistently good.

      this would be amazing at the end of a high end tasting menu dinner. 10 food courses paired with wine followed by 4 small dessert courses paired with coffee

    Amazing concept. Would love to watch a longer documentary style vid of this too! Diving into the taste testing and R&D aspect would be fun. Hope this event happens again.

    the intense acidity of the peach ring just totally resets your reference point for what is sour and what isn't, and the gentle acidity of a pourover coffee instantly turns into total flatness

    Looked well executed! I wonder if a “brunch w/ coffee pairing omakase” would be a more practical idea. I feel like some people can be too fatigued with multiple desserts.
