Pho is comfort food, although personally, I'm not into soupy stuff. When I went to Hanoi last year, I got to taste Pho Ga (chicken pho), and it was the cleanest soup I've ever tasted (if that makes sense). I feel like their food is so healthy that even they have meat, you have the veggies to offset it as well.
@@GeorgiaAndrea what she meant was that meals that only have meat is unhealthy or unbalanced. Because you need mineral and vitamins from vegetables which you don't just get from meat.
Thank you for teaching me how to make pho. I make it all the time now. I have a short cut. I make a tone of beef broth and chicken broth once a month and freeze it in portion sizes. Makes pho quick and easy when I'm in the mood or for other recipes.
I love that Marion knows what’s up when it comes to cooking noodles and puts so much emphasis on how to cook them in her vids. Noodles are where a lot of dishes get that substantial “bulk” from so to see her so diligently explain to people who probably don’t know how to cook them is really lovely.

This recipe is almost perfect👌🏻 i follow this recipe every time I make pho and it’s delicious 🤤 except for one thing - I only use 1-2 star anise, they’re very flavorful and you don’t need that many, in my opinion.

This is all great. What I would recommend though, to lightly roast the bones instead of doing the first boil, then adding everything in that baking tray into the pot to make the broth. This adds a bit more flavour to the dish
"Fuh" is all about the broth. :) The recipe looks really good and authentic. You should make Bun bo hue, it's the least known Vietnamese soup but equally as delicious if not better if you like spicy beef soups. :)))

Looks great, Marion. I'd add whole coriander seeds along with a black cardamom pod and toast it with the other aromatics. When serving, I'd slice up cilantro with the green onions. And that broth should cook on very low heat for at least 8 hours to get all the goodness extracted from the bones. :)

2nd that, i make a lot of Ramen as well.. my Philosophy for broth is basically if you don't plan to spend a minimum of 8-10 hours then you should not bother at all and go eat on a restaurant instead. These recipes are meant for the average person that can't spend more than 2-3 hours in the kitchen.

Your broth technique is so on point. Clear and flavourful broth. Like you, I don’t add fish sauce during the simmering, I added right before the final assembly. I have invested in a Japanese Vacuum Insulate Thermo pot ( not same as Insta Pot) best gadget to own if you cooked broth every week. After the bone came to a full boil on the stove top, then I placed in the Thermo pot and forget it for four hours later. The result is simply perfect 👌, clear broth and lots of beef flavour. Watch you every week. ❤️ from the frozen north, Canada.
YESSSSS! I agree ... a good pho doesn't need the sriracha and hoisin. A good pho broth should be able to stand on it's own and be appreciated. PHO IS ONE OF MY Favorite vietnamese dish. The best one I've had has been in NY China town. Its hard to find some good Pho here in Florida. I made this one for being the first time it came out pretty good. Needed a little bit more seasoning in the broth but other than that not bad. Thanks for the recipe
I LOVE adding a couple tablespoons of peanut butter to my pho (sriracha and hoisin too). That beefy, nutty, spicy, flavor is AMAZING. When I eat pho at a restaurant, I can't help but think it would taste so much better with a big scoop of peanut butter. Also, it's crazy how I've eaten ginger all my life and have never seen it roasted like that. I will try that out next time I make pho at home. Thanks!
There's a pho version where they add sate that has peanut butter in it. I've not had it, but I heard it's delicious! Go watch Quang Tran's channel where he showed this a couple of months ago.
Last year I discovered phō and never ever looked back. We are at the local phi place on average once a week lmao. I mean sometimes I'd go three times a week. I'm not playing around when it comes to phō!!!!!

I think you're missing coriander seeds and cardamon in your spice mix. Also for better results, lightly toast your spices to release the aromatics before adding them to the pot :)
Another tip from my Grand Aunt: Leave and simmer some of the beef bones until the meat has completely dissolve into the broth (not literally but like all the tastes are gone from the meat themselves). This will make the broth cloudier but the taste will be full of Unami and sweetness. Fun fact: The clearer broth is preferred by Northern Vietnamese, while cloudier broth is enjoyed by those from South Vietnam.

If you just want to dip your toes in first, check out Honeysuckle's channel. She made easy pho about a year ago for those intimidated or don't have time.

Being a vietnamese imma say Marion's is more like vnese pho bc she grilled onions and gingers on gas (usually on coals). But I tried Joshua's at home and it was bomb too. His broth is more beefy (ofc he use more bones), ya'll can know which is more vn-y just by looking at the broth, and yes Marion's is more clear. I could finish 2 bowls of these 2 recipes 🤤🤤

I do agree that removing the scum leads to a clearer broth. However, despite the name "scum" and how she calls it "disgusting" at 2:07, it actually isn't. It's just a bunch of gelatine and other healthy nutrients that are simply discarded bc they make the broth look cloudy. If you keep boiling the scum, it'll eventually integrate with the broth.

I have this this recipe yesterday. Ugh! It was amazing. I have got few mistakes though like I forgot to soak the noodles in water. And I was not able to find thai basil in the supermarket that I went here in Abu Dhabi buy nonetheless, that broth was perfect. It has been almost three months since I was allowed to be at the city proper due to COVID-19 restrictions and having a bowl of Vietnamese Pho was heaven. Thanks for your recipe! This is a great video. Marion gives great instructions. My stock is cooking as I write this comment...LOL.... I followed all the instructions but felt skittish roasting the Onion and Ginger on the burner because I recently just recovered from a House Fire!....Seriously. So I just threw them in the pot. Also, I didn't have any Cloves so I threw in an extra stick of Cinnamon. I also threw in a bulb of Garlic. So far, it looks and smells as it should!

Add whole coriander seeds and black cardamom to the aromatics and toast them. When serving, slice up some cilantro with the green onions. And cook that pot for like 8 hours to get all the beefy goodness out of it.

@@NaMatwo2 Many commenters mentioned Joshua Weissman made pho on his channel today so I just checked him out. His pho looks really good - the broth is a bit dark, though. If you just want to dip your toes in first, check out Honeysuckle's channel. She made easy pho about a year ago for those intimidated or don't have time.

Being a vietnamese imma say Marion's is more like vnese pho bc she grilled onions and gingers on gas (usually on coals). But I tried Joshua's at home and it was bomb too. His broth is more beefy (ofc he use more bones), ya'll can know which is more vn-y just by looking at the broth, and yes Marion's is more clear. I could finish 2 bowls of these 2 recipes 🤤🤤

I do agree that removing the scum leads to a clearer broth. However, despite the name "scum" and how she calls it "disgusting" at 2:07, it actually isn't.
It's just a bunch of gelatine and other healthy nutrients that are simply discarded bc they make the broth look cloudy.
If you keep boiling the scum, it'll eventually integrate with the broth.
I think she's also after a thinner consistency for the broth (the scum does homogenize with the broth, but it can make it slightly thicker)
How long should you cook it to integrate it?
What about the spices n rock sugar!!??

Have never eaten Pho but it looks good. We have a Pho restaurant that is soon to open in a building that had my favorite Asian restaurant that closed for retirement after operating for 30 years.
My friend is a Vietnamese chef and has a few restaurants in NYC. He never ate Pho with noodle. Pho tastes so much better without noodle.

I have this this recipe yesterday. Ugh! It was amazing. I have got few mistakes though like I forgot to soak the noodles in water. And I was not able to find thai basil in the supermarket that I went here in Abu Dhabi buy nonetheless, that broth was perfect. It has been almost three months since I was allowed to be at the city proper due to COVID-19 restrictions and having a bowl of Vietnamese Pho was heaven. Thanks for your recipe! I will be trying your other recipes very soon.

I followed all the instructions but felt skittish roasting the Onion and Ginger on the burner because I recently just recovered from a House Fire!....Seriously. So I just threw them in the pot. Also, I didn't have any Cloves so I threw in an extra stick of Cinnamon. I also threw in a bulb of Garlic. So far, it looks and smells as it should!

Thank for the recipe! It definitely tastes like authentic Vietnamese pho. I think the mistake I did was not add enough water for the stock and there was not enough soup for everyone.

Perfectly acceptable and accessible pho recipe. However, the stock needs to go hours longer, won’t say how many. This works, end of story. Love you, Marion.
