I'm from New Zealand and my Brother runs a Cattle farm, the soil is volcanic so the grass grows very fast, we also don't have predators like Bears and Wolves, also most of our Meat is Halal because we export a lot of it.
I’m from NZ glad you enjoy our meat, I maybe biased but I think kts the best in the world. As we don’t have extreme temperatures here pretty much all our cattle and sheep are pasture fed.
Cutco knives are not serrated. The tips are not sharp, the sharp edges are in the curved parts of the edge between the tips. This keeps it sharp because the sharp edges usually never touch anything hard, just the food you are cutting.
The New Zealand Lamb at Costco is also excellent. I filet the boneless leg of lamb into a flat piece and put it on the grill. Also marinade it in Greek yogurt, lemon juice, salt, pepper and rosemary, overnight. Scrape off marinade before bbqing. Comes out so tender and juice, fabulous with a nice Greek salad ( Unless of course your carnivore) but maybe top with some feta.

I recently got my Ninja Foodi 12-in-1, got my first chuck roll from costco, chopped it up just like you, and cooked it exactly like you do, and it is amazing! I can attest your process is reproducible.
I am here in the South Island of NZ. You are right, it is all grass fed here in NZ. Grain fed advertised in NZ, is still grass fed all the animal's life. Just grain finished at the end. The quality is very consistent and way better than Australia.
The problem with the Costco Business Centers is that there are only 28 Costco Business Centers in the U.S., spread across 16 states, so it seems your shopping there is not very relevant to most people unless they live in California, which has 11 Business Centers, and Texas & Washington have 2 each and 13 states only have 1 store. 34 states don't have a single one. We would have a minimum of 16-hour round trip of over 1,000 miles to get to and from the closest one to us. Consider yourselves lucky to be near one.
Never even heard of them until today...but Im in South Australia where we only have Costco...and currently only 1 in my entire State. I think Victoria might have 2 or 3....which is 9 hours away :) Even our Costco is over 1 hour drive,
Thanks for sharing! I didn't know Costco Business Center had grassfed chuck rolls. From googling around, it seems almost all beef coming out of New Zealand is grass fed, b/c of their good temps year round, they can have cows outside year-round and have grass year-round. The size (only 13lb) of the chuck roll also indicates it is grass-fed, rather than fattened up on grains and corn at the end of its life. Thanks for sharing!
Yeah, the grass fed beef out of New Zealand seems SO well priced, it's almost too good to be true. Grassfed beef from just down the road from us is 10$/lb, and that's even when we buy a 1/2 cow, so a lot of it is ground beef. I like to support local, but 5$/lb from New Zealand is too good to pass up.
Got to grill those. Air fryer does not do steaks justice. But you do you. I like these videos it helps me decide what big cuts of meat to buy at Costco.
The marble looks great, a lot of time grassfed is too lean, or the fat is just on the outside, I tend to prefer grain finished meat. I’m curious to see how you guys enjoy this one. 👍
The beef will be 100% grass fed, beautiful NZ Flintstone (lol) style cut beef. Should beef fat be yellow? Colour of fat is heavily influenced by feeding regime and specifically the intake of carotene in the animals' diet. Genetically, some breeds are more susceptible to yellow fat. Pasture fed cattle may produce a yellowish or creamy coloured fat. Grain feeding over a period of time produces white fat. Guys please buy some NZ lamb it is 100% grass fed, super tasty. I wish you were her in NZ you would eat like kings here as you are able to buy 1/2 or 1 whole cattle beast butchered for the freezer, That is how I buy it works out so much cheaper. being on our own life style block we grow lamb for the freezer but we buy in our local beef when a neighbour is getting some beef processed
Love Cutco knives! I only have one, it’s probably 30 years old, but it’s not the long kind so I can’t carve up big cuts of meat with it… It was the only one I could afford at the time. They were sold by a lady I worked with, at home parties. I always meant to add more over time, but she stopped being a Cutco consultant, and I never found another one for some reason.
I googled , my Costco will deliver one and the picture has the same farm but did say grass fed on it, can't wait to try it thanks I will Sous vide mine.

The price there is completely mad. Thats around $9.50 per kilo Australian, cheaper than Costco mince. For comparison, grainfed briskett is $14AUD kilo ($6.40USD per lb) and rib eye is $35.99AUD kg ($16.40USD per lb). And I can jump on a plane and be in NZ in 5 hours. And you were saying the prices are higher in california? Yoikes. Forget resturants, next time Im in the US im buying an airfryer and just heading for Costco :) And thank you for the airfryer tip! Cutco knives are superior. I inherited an entire set from my MIL and my kids bought me an entire set of steak knives. They are guaranteed for life. My MIL killed a snake with one and it chipped the blade. They replaced it for free! Can't go wrong with Cutco. Used to live in the town where they are made. My set is 75 years old and still going strong!

i think overall grass fed is likely better for you, especially if you are raised with it. But, a while back I started drinking milk and my half and half for my coffee that was from grass-fed cows (like you say I could taste it), and suddenly I developed even worse grass allergies, then became allergic to tomatoes- which apparently is actually a grass allergy. So even though that was just dairy, I'm staying away from grass fed. I'm too much of a hot house flower I guess.

Labeling is very deceptive these days. The package of meat could say product of USA but the cow was only born here, then raised in Africa, slaughtered, then shipped back. They could label "grassfed" but only fed grass for a day. It has to say "100% fed and finished". If you haven't already, try sourcing from local farms. You get on average 200% more nutrients per lb vs store bought. With as much meat as you two purchase and consume, it would make more sense to support a local farm vs corporate owned. You're not only feeding a hard working family but you're getting a superior product with 200-400% more nutrients per lb.
Also, grass fed does not mean the cattle were roaming around in a pasture. They cut the grass and bring it to barns to feed the cattle. Watch "The Hoof GP" on UA-cam. He lives Ireland and you will see how these cows live cushy lives in modern barns.

At our Costco you have to ask the meat department for the Chuck Roll but the Costco Business Center had everything in the aisles.
