Pandan Layered Cake | Pandan Agar-agar Jelly Cake | 香兰千层蛋糕, 香兰果冻蛋糕

  • My favourite childhood cake! Today, I’ll be sharing a lovely pandan layered cake recipe. The cake consists of a soft and light cake, layered with pandan jelly. The Pandan jelly adds a rich, fragrant flavor to this cake. It’s so delicious; you have to try it!

    Ingredients 材料:
    Cake Ingredients 蛋糕材料:
    4 egg yolks (4粒蛋黄)
    50g sunflower oil or neutral tasting oil (50克葵花籽油或中性口味的油)
    80 grams water (80克 水)
    107 grams plain/AP flour, superfine or self raising flour(107克中筋面粉面粉、细腻中筋面粉

    1/2 tsp baking powder (don’t add if use self raising flour) 1/2茶匙泡打粉(如果用自发粉就不用加)

    90g caster sugar (90克细砂糖)
    1 tsp lemon juice (1茶匙柠檬汁)

    Pandan juice (40 grams pandan leaves + 100 ml water) 香兰叶汁 (40克香兰叶 + 100毫升水)

    400 ml coconut milk 400毫升 椰奶
    20 grams cornstarch 20克玉米淀粉

      Hi yes shouldn’t be a problem, replace the all purpose flour amount with cake flour

    Thank you for sharing with us a lovely recipe. I am not able to get pandan leaves, could you suggest how l could change the recipe using cocoa powder. Thank you.

      Hi again! Yes, you can change the pandan leaves to cocoa powder and change the water to milk. Mix cocoa powder with 100 ml milk. Since you are using cocoa powder, you can also change 200 ml coconut milk with cream instead of using 400 ml ml coconut milk. The rest of the ingredients and process can stay the same. I have not tested with cocoa powder but this is how I would improvise it.

    Hi, I want to try out your recipe. However, may I enquire whether it is ok to use Instant Jelly powder instead of Agar Agar powder? Just wanted to make sure before I proceed. Thank you for replying.

      Hi if you use instant jelly powder, mix the powder with sugar first so that there will be no clumps when cooking. It really depends on the texture you want. If you use agar-agar powder, the pandan jelly will be similar to firm custard texture. If you use instant jelly it will be more springy texture. Another thing to consider is my agar-agar powder to liquid ratio based on packet instructions is 10grams per 1000 ml liquid. So I used 9 grams for 950 ml liquid. You will need to adjust your powder accordingly. If you have other questions do drop me another comment.

      1 teaspoon is roughly 3 grams. So you can use 3 teaspoons

      Thank you for yr prompt reply. Appreciate yr time taken for responding. If I am not mistaken the Swallow brand Agar agar powder comes in a 10 grams packaging. Would it be alright if I just use all the 10 grams in the packet? Tks again.
