sometimes I feel like recalc just doesnt work.

Ok but, once I'm done with the simulations and nudging the cloth around... how do I get the dynamic mesh to 'solidify' as a single piece, so that when I turn off dynamic subdiv it doesnt become a single sheet again?

Just hit the "apply" button which is besides the "Dynamic" button in Dynamic subdivisions menu. It will apply them to your mesh and convert it to the usual subdivisions which you can work with further. Is that clear?
