As someone who has prepared a holiday meal for only 1 or 2 people more years than most, I like to use the holiday to roast a game bird like duck or pheasant, and to experiment with new cooking techniques or other new-to-me ingredients. All the traditional American sides make an appearance, but prepared in smaller casseroles or single-serving bakeware (e.g., ramekins, muffin tins, individual-sized tart crockery). Don't forget the quick-pickles or other vegetable crudites to balance the starch, protein and gravy on your plate! Dessert is typically a small tart, parfait or custard cup with fruit. There is a leftovers plan for the weeks which follow.

@@autumnbecomesme I hear that! I lived in New England for a decade. The good news is, there are great markets and great farms throughout the region to source a wide variety of ingredients! Yes, my holiday plate tends to look like a tasting sampler, and the menu changes every year. I start prepping & cooking a few things in the weeks ahead so the day-of is calmer. I've learned how to make some traditional dishes portion-sized (e.g., "stuffing muffins" and individual desserts like fruit tarts/creme brulee/custard parfait). I'm generous with herbs and spices to give each dish its own personality on my plate. I almost enjoy the leftover week more when I get to be even more creative....roasted veggies end up in pastas, topping salads, dumped into a lentil chili or blended into a soup. Leftover herb stuffing becomes a savory bread pudding or baked up as croutons for a creamed soup. Leftover mashed potatoes will top a pot pie with the last of the poultry. It can be challenging to cook for 1 or 2 when money, space and time are snug, but can be accomplished with a plan!

If I can do a half-hour prep every other day for 2 weeks and be ready for a low-stress assemble-and-bake the day of, I will do that.
@@kristy7191 You know, it’s sometimes fun to spend the holidays alone. No one gets mad if you want an extra slice of pie, or to leave out a side you’re not crazy about. You can watch whatever you want on TV (I watch the Macy’s parade and then the National Dog show). It’s kind of fun!😂😅

Publix has everything you need for Thanksgiving Dinner. I bought Hormel Turkey & Gravy, Savannah Corn Bread Dressing, Savannah Sweet Potato Soufflé , Green Bean Casserole & Mashed Potatoes. And I also have a Coconut Cream Pie, and a Lemon Pie.

That's smart. Turkey breasts are usually pretty good. I think the problem is that I just don't eat a ton of turkey in general unless it's ground so it ends up living rent free in my fridge and with the rent here in MA that's just not okay lol. XD

You are absolutely right. I bought a little 1-2 serving apple pie, but it was so unimpressive I just didn’t include it.😅 BUT if you want to see a really good dessert you might want to check out my Alton Brown Bourbon Pecan Pie. That was hands down one of the best pies I’ve ever eaten lol.
