- This is my first UA-cam video sharing two of my favorite recipes that my family and friends love. I enjoy cooking and would like to share my experience as a Jamaican living abroad. I hope you enjoy it!

I normally season the goat with curry and I could never get the taste I want. Omg I burned the curry like how you did your, my goat was so good. It was the first I have no left over everyone love it. I also tried it with chicken it was the best. Thank you so much. I will be doing curry chicken my next potluck, because I will be following your recipe.

I'm a Trini half-breed, Hindi food was and remains a staple in our home. I've never seen Dahl made like that before. We do curry mangoes as a side dish.

Thank you Auntie. My Mom, bless her soul, would pressure-cook her split peas all the time. I leaned it from her. It boils & cooks down better when you pressure-cook it. However, you gotta know what you're doing & you can't leave it unattended, when cooking. Also Auntie, must stop using seed-oils (Corn Oil, Canola, Sunflower, Peanut, etc). They are inflammatories and damage your organs & joints. Use olive oil, avocado oil, etc. Thank you! 🤤

Hello Aunty Pauline, you are a very good cook. I like how you make different dishes. I cook Indian dahl weekly and I add all the ingredients you used, except for the green mangoes. I make other dishes with green mangoes. I guess you like a bit of sour taste. At the end you can ‘chunkay’ with small pieces of garlic and geera (cumin)… dark brown only. If it gets black, it will alter the taste. You did well 👍🏼🙂

Everything looks delicious, I'm Jamaican Indian and you did a wonderful job. When we chunkake the dahl when its done try putting cumin powder instead of black pepper. I pressure cook my split peas everytime, no problem.

In India, especially in the south, adding the oil and spices infusion to the dahl at the end is called tadka or sometimes tarka. It's a method that has different names regionally, so Indo-Jamaicans may have a different name for it, depending on which region of India they originate from.

In Trinidad that's how we do it. We heat oil and add geera etc burn it and put it in the Dahl.
In trinidad its called chunkay the dhal...❤ add beautiful flavor
Yes. In Guyana, when the daal is finished, fresh garlic cloves are boiled in oil, then the hot oil + boiled garlice are poured into the daal. We call it Chunkay. However, you have to be careful and wear long hand pot holders, because there's a big steam blow-back. You can easily burn yourself. However, doing it this way makes the daal completely different & taste much better...🤤
