Kulchas are best at Bhai Kulwant Singh (opposite Jallianwala Bagh) and Bansa (Chitta Katra). Lassi is best at Ahuja. Fruit icecream at Rana's Ice Cream (Lohgarh) is something no one should ever miss.
Of all the things you have mentioned, you missed out on 'Kesar Da Dhaba' which has the most authentic one and running since 1914. Must check out! Secondly, you have also missed out on phirni of Amritsar. Do check that out too.
Just to correct- about Jallianwala bagh, people were not celebrating new year over there as you said. They were on protest against the arrest of pro-indian independence leaders..

Harminder Sahib Sarovar is not a man made lake. It is a lake that had been lined on the side only. It has a mud base. This lake has been there before the Guruwdara was built

it was very gud I am amritsari and can give u some suggestions first of all u need to add saada pind and gobindgarh fort. These are a kind of ancient museum parks.they will give u glimpse of every single traditional activity like horse ,camel ridding.Beside this u must eat kulcha at 'ashok the kulcha shop' then for chicken and fish we have amar fish,beera,makhan all are of same kind.

Sorry to say.. but u missed one major thing in Amritsar. "Hansraj Kulche choleya vala" a ₹10 meal from nearly past 20 years. One of the most busiest shop in Amritsar in afternoon. You will not find placento keep a step in.
