I guess Tai-Pla and Nam Kei curry. They made from fish stormuch preserved. Kaffir leaf and lemon grass reduce smell of meat in Thai food. Fried fish with garlic or galanga is common in southern food, reduced fishy smell.
There are many dozens if not hundreds of naam prik recipes… some dry, some wet. Many different proteins and spicy-ness levels. The only one I feel a bit off on (don’t like much) is the one with maeng daa (giant water bug). The fish ones are my favorite… like the one you had. Naam prik is sold everywhere… easy condiment to keep with you to add to any rice dish.😊

In small bowls, one is gaeng-tai-pla with coconut milk, and another is yum-tai-pla. The last's smell a bit stinker than the first one, but they both unique even for most Thais.😂 😂 Many authentic southern dishes have a fish as main ingredients. If you are a fish lover and don't have a problem with spiciness, I think it's like heaven for you🤣🤣 I think thing on the fried fish is a mixture of garlic and turmeric. They use it for get rid of those fishy smell and give their food a good smell. And that's why most of southern dishes are in yellow(only turmeric) or orange colour(turmeric and chilli).
Southern food often has a lot of herbs, especially ginger or galangal and turmeric. And then there will be various sets of vegetables including chili paste, shrimp paste or chili paste for customers to eat for free. In addition to the work ordered, it was their doing. 😊😋🥲🤗
If you want to do a trip with a fishing trolley; might do 1 or all 3 things… 1) ask a policeman (they usually have a good idea of who might be appropriate); 2) ask on a Reddit group for Thailand; and 3) ask a Facebook group on Thailand. It’s always easier when someone knows someone. 👍🏻😃
For me, southern food is very tasty, strong flavor, some types have a strong smell, especially Budu water. which is a special food of the South It is customary for southern restaurants to provide customers with a variety of vegetables (for free). Some restaurants also provide chilli paste.

Naam phrik (chili sauce) plaa tu (mackerel) tod krop (fried crunchy) 😊
There are many dozens if not hundreds of naam prik recipes… some dry, some wet. Many different proteins and spicy-ness levels. The only one I feel a bit off on (don’t like much) is the one with maeng daa (giant water bug). The fish ones are my favorite… like the one you had. Naam prik is sold everywhere… easy condiment to keep with you to add to any rice dish.😊
The giant water bug taste is strange, we ate in Laos in Dips with sticky rice.

Plus, curries in Nakhon Si Thammarath are even within Thailands south feared for their level of spiciness😀

Many authentic southern dishes have a fish as main ingredients. If you are a fish lover and don't have a problem with spiciness, I think it's like heaven for you🤣🤣
I think thing on the fried fish is a mixture of garlic and turmeric. They use it for get rid of those fishy smell and give their food a good smell. And that's why most of southern dishes are in yellow(only turmeric) or orange colour(turmeric and chilli).
