Easy Microwave Real Cheese Popcorn - Chicago Style At Home

- Closest Cheese Popcorn I've found like that gooey stuff from Garretts in Chicago. 4 ingredients. Bag popcorn, margerine, cheddar powder, coconut oil. This makes a cheese liquid from paste to pour. So quick and easy to make with no special equipment.
3 Tablespoons margerine (not light)
1/3 cup popcorn (Pop Secret Jumbo, or mushroom style)
3 Tablespoons Coconut Oil
3(+) Tablespoons Real Cheddar Cheese Powder (like Anthony's)
Nordic Ware Popcorn Popper Bowl
Microwave the margerine in the popper with the lid on for 45 seconds.
Add and pop the popcorn. Empty into a large bowl with a lid. DO NOT SALT
Microwave the coconut oil for 15 seconds in a glass measuring cup.
Add the cheese and stir.
Microwave the oil/cheese mix for 15 seconds. Stir.
Drizzle small streams on the popcorn, and shake. Do this at least three times, so you don't add too much at once.
Let it set about 5-10 minutes. DO NOT SALT.
Game changing recipe man!! I just watched your video, ran out to the store to buy margarine (because I never use the stuff) and I actually have been buying Anthony’s cheese for years so had it in the pantry. It turned out perfect! I’ve always tried buttering the corn and then sprinkling the Anthony’s on there. Always end up with a bunch of wasted cheese powder at the bottom of the bowl and never really happy with the results. God bless you for this recipe ! :) 🍿 🧀

For those of you experiencing an "overly coconutty" taste, be sure you're using REFINED coconut oil. For the cheese sauce, we've also *successfully* used clarified butter/ghee instead of coconut oil.
For those of you experiencing "chewy" popcorn (we've been there plenty of times), the problem is likely STEAM. Try not to let hot popcorn sit in an airtight container---allow the steam to vent.
We recently got a stovetop popper, so have adapted the technique in this video to use it.
We also make homemade Chicago MIX (your cheese popcorn technique + Glaze-Pop brand caramel popcorn) now.

I had been craving Garrett's popcorn for so long. The closest one is 3 hours away and it's expensive to have shipped since you have to order with the popcorn tin. I've made this recipe several times - use the Anthony's cheese powder as suggested in the video and it is SOOOOOOO good! Thanks for posting!

Awesome! I experimented soooo many times trying to find that “Garrett’s” taste. Different powders and oils, and all were pretty much fails. The closest I came was canola oil and a commercial “sprinkle” powder, but it was much too salty. Thanks for this! I can save myself time and money now!!

Great recipe what you can do is to place popcorn on a baking sheet to air in a warm oven for a few min. to dry will work really well.

@@sth5033 it came out ok. It was a bit more saltier than I thought it would be. The coconut oil I used had a taste that transferred to the popcorn. I'll have to make another attempt this weekend with a different oil.
I will say that the powdered cheese comes in handy. It's definitely worth buying and trying to recreate the dish.

My sister has gone to Vegas twice since this pandemic and both times, including today (Labor Day), Garrett's was closed. She even sent me a pic not even an hour ago. I told her, thassokay. I'm gonna make my own Garrett's and call it Jarrett's, after my youngest son. So I came to UA-cam to see what direcrion to go in. Hence, I'm here. Thank You!I🍿🙂 ..now, off to Amazon I go!😁 I got a small unopened jar of coconut oil and some Orville already. I'll try it with my unsalted butter, first.

Thank you I subscribed. Funny today for the first time I bought coconut oil. And I have to do real butter. I leave in the microwave for about 30 seconds stop kind of let it cool down and then for however long I need to melt the rest.

I tried it - made the pop corn with oil. There was not enough cheese so I made a stronger batch of cheese - it was better. I have made Carmel - Chocolate - Cracker Jack and kettle corn with the chocolate glaze which is my favorite. Your pop corn was chewy I hate chewy. I had four bags of the different flavors above so I made heavy oil and cheese and poured over it and into the oven. I love it - you get it all. Thanks for sharing. Next I will just make my Carmel with roasted peanuts - do the oven - and then pour the cheese on. Good Luck Everybody.

Have you tried melting fresh cheddar cheese in the coconut oil rather than the dehydrated? I'm asking because I always have it in the fridge. I've never tried nor heard of Chicago style cheese popcorn and I'm anxious to try this.

Great input all around, thank you! By the way, does it not make the popcorn soggy since coconut oil or any oil at all when poured over the popped corn must contain a lot of moisture? Also, what other oils can we use instead of coconut oil, I feel a neutral tasting oil would be a better choice no?
I would think other oils would work, but I tried Coconut oil because that is what is used in movie theatre popcorn. Online suggests virgin, saying it is more like theatre popcrn, but I used regular. It didn't get soggy because it is used to create a thin
"paste" when mixed with the cheese powder. Just be sure to drizzle lightly, several times over the popped corn.

I just found your video and absolutely love your instructions. I do have a question, can I stick it in the oven to help it Harden some? I don't know what Chicago popcorn is like but I wanna make a cheddar popcorn that's not wet
It doesn't wet the popcorn. The oil helps it stick to the popcorn is all. They also use oil and powdered butter for the same reason.

Like he said, decades ago, before they sold it, you could seen them hand churn the cheese into the popcorn in giant metal drums. You always had to wait because it was made to order

Hi. Not sure where or when I got it, but it's a 5 piece stacking bowl set with lids. The red large bowl is 12" across the top. GHP is on the bottom.

You dont know how much i love you right now. I have been driving myself crazy trying to figure out how to make gourmet cheese popcorn. Im tired of paying 20 dollars for one bag and i crave it comstantly. It may be a little expensive at first to start out but the much bigger yield you get is so worth it. Thank you so much !!!!

Does the coconut oil lend any coconut flavor to the cheese sauce? / Does it come out sweeter than if you used another oil?
It does if you use regular coconut oil which changes the taste of the cheese.

How do you recognise corn kernels by looking at them if they are mushroom or butterfly
The only way I can tell is by looking at the package label. But I wonder if popcorn growers can tell. Hmmm. Good question. I think that if it doesn't say muchroom, and just says popcorn, then it's regular, or butterfly.
One is round on the top, kinda looks like the little pink squid from finding Nemo. Butterfly are like what the names says, kinda looks like "wings".

Can you use air popper popcorn for this as well?
You can pop the popcorn however you please. The important part is just the cheese powder to coconut oil ratio. Technically you could even pop the popcorn without margarine if you wanted. The whole point is to basically coat the popcorn with the cheese sauce. Try not to go above 135 F degrees with the cheese sauce otherwise it may start to burn.

I haven't tried Hooser Farm, but I would think there's many good cheese powder makers out there. I just happened to try Anthony's based on the ingredient description.
Hey boys and girls. I got to turn ya on to this. MY POPCORN i sprinkle 1/2 tbs. jalapeno powder on my bag of popcorn, that was cooked and shook up OMG YUM ~ YOU GOT TO TRY THIS 👍👍
Why not use canola oil (a natural liquid) instead of coconut oil?

I think they are just out for the time being. I have emailed them asking for an eta. There are other quality powders, but I haven't used any. Dale

My cheese is clumping the second i put it in. I think it might be my coconut oil, I'm using Virgin Coconut oil and I'm seeing people say refined is the best.

Figure it out? What was the problem? I had bad clumping to, but i did what he said not to do, i used butter. Butter will not work. Live and learn. I dont like margarine and didnt have any anyway. SO, I just used powdered cheddar and coconut oil and it turned out pretty good.
You need to use refined coconut oil if you don’t want your popcorn to have a coconut taste…

I have a 1000 watt microwave, and the time seems to be around 4 1/2 minutes max on high.
I used a coconut oil but had a strong fragrance of coconut. In fact it didn't smell like cheese popcorn it smelled like coconut. Am I using the wrong kind of coconut oil? 👍
