    Made two gallons of this over the past three days using your recipe. Your tip about bouncing the cheesecloth in the strainer is genius. It is for a Cinco de Mayo event at church. I'm so pleased with the outcome. Thank you for the time and effort you spent on perfecting this recipe.

    Horchata does not go with almonds

      You're absolutely right. Technically speaking, Cyperus esculentus (also known as Tiger Nut, Earth Almond etc...) would be used to make horchatas, if you want to get down to the history of horchatas. However, seeing as Tiger Nuts aren't easily found at a local grocery store, the next best substitution would be...almonds. As almonds have close to the same characteristics as Tiger Nuts.
