I made this sauce tonight. It's yummy, for sure. Something you can also do is make plum jam. The jam can be be used as a base for an asian sauce. I've done that before with mandarin marmalade. I use it as a base for homemade orange chicken. Thanks for the recipe!
This looks amazing! I need to now wait until the autumn unless I can find plumbs from Europe - I live in the U.K. so I am so glad I have found you as there are so few safe canners out there. Rose Ted Homestead was my first experience and she is so safe too. Looking forward to more canning recipes

The past month or so has been atypical, my nana passed at the end of September and im just coming back around. I use Chipotle/morita chili powder with my wild plums for a chamoy sauce. It is great on fresh fruit and boyfriend uses in his micheladas (beer with tomato juice).

I made the sauce today and I reduced the salt down to 1 tablespoon. But at the end I tasted it and thought it could use maybe a little bit more. I ended up adding an extra teaspoon of soy sauce instead and then I thought it was just right.
I will add one more comment. you can use any vinegar i also suggest to use apple cider vinegar..but in general it doesn't matter much..after about 2 weeks you will not feel it at all.that is why you need to wait about that amount of time to test it.. Also you can use Xylitol instead of sugar. and ofc don't worry about first taste..it will taste a bit off because of that venegar..but that is ok that will go away..so put plenty of chilli or similar spice to feel that extra bite :)
Nice video. i have to disappoint. It has it's name it is called : Plum Chutney here in Europe or in west in general. All ingredients are fine i would only not chop plums..it is better to have them in a bit bigger pieces..but rest was ok
