  • Levain cookies originated from Levain Bakery in New York and are famous for their crispy outer shell and gooey insides. I decided to make a matcha white chocolate walnut version and seeing as I had white rabbit candy left, stuffed a few of them with those too!
    Servings: 4
    Ingredients | 材料
    115g Butter | 115g 牛油
    95g Plain Flour | 95g 中筋麵粉
    95g Cake Flour | 95g 蛋糕粉
    50g Dark Brown Sugar | 50g 黑糖
    50g Raw Sugar | 50g 砂糖
    1 Egg | 1個 雞蛋
    100g White Chocolate | 100g 白巧克力
    100g Walnuts | 100g 核桃
    1.5tsp Matcha Powder | 1.5茶匙 抹茶粉
    12 White Rabbit Candies | 12個 大白兔糖
    1/2tsp Vanilla Essence | 半茶匙 香草精
    1/4tsp Baking Soda | 1/4茶匙 蘇打粉

    I made these today ! They came out really well - I may add more matcha next time 2tsp to get more of that flavour in!

      Thank you! Yes, some matcha brands might have a weaker matcha profile so you can definitely add more. It's the bitterness of the matcha that balances out the sweetness of everything else.

    Hi. Just wondering the temperature is 200 degree Celsius in fan forced or conventional oven?
    Also should I bake it at the bottom rack or middle rack?

    I tried this and it tasted really yummy! But, not sure if it is just me, i feel it taste more like a cake instead of the typical soft cookie

      @@Stantalentz the cake flour is what gives it the gooey delicate insides. The outside should be crisp with a very soft inside. Perhaps you could try baking it a bit longer as well? It is really personal preference though, if you want a bit more structure to it you can use 100% AP flour, result should be similar but the structure should hold just slightly more integrity.

    Wow that looks good, but i want to ask why you don't use melted butter/brown butter for your cookies?

      Hi there! I don't use melted butter because they result in chewier cookies whereas this recipe results in a soft cookie. Brown butter can be used for cookies but if you want a soft cookie you would still need to resolidify it by putting it back in the fridge.

    Hi, raw sugar is white sugar right? And the matcha powder is sweet matcha powder or plain matcha powder?

      bee luc hi raw sugar is different but you can use white sugar instead of raw sugar.

    Question if I make this with the white rabbit and it’s cooled down, does the rabbbt dandy become hard inside.

      It does become chewy instead of melty but you can microwave it for about 20-30 seconds and it'll become soft again

    Can I use levain cookies recipe and just add on marshmallow when making smores cookies?

      Hi, yes you can use this recipe and just omit the matcha and white rabbit candy. You can then add 100g choc chip or choc chunks and 100g Graham cracker crumbs. I've tried this before but stuffing it with a marshmallow but you can also just centre the marshmallow on top.

      Graciellaa Graciellaa thank you! Yes you would need to replace the egg with milk and also you need to treat the flour by heating it in an oven to about 70C degrees.

      No problem! To be honest I haven’t made them as edible cookie dough before but the eggs are used as a leavening/binding agent for when baking so I don’t think changing it milk will affect the taste. One thing is I wouldn’t recommend stuffing the edible cookie dough with candy otherwise it’ll be really chewy. Baking it makes the candy melt like caramel so it goes really well with the cookie. I can look into creating an edible cookie dough recipe though if you’d like !

    Can I make these small cookies only? whats the temperature and how long should I bake it?

      Yes, you can make these half the size but I wouldn’t go any smaller than that and make sure to pack the dough high. I haven’t personally made smaller sizes before but would recommend you first bake for about 6-7 minutes- just until you see the top form a golden crust. Then take out to rest.

      It would depend on whether the white compound you have says it’s for baking or not. If not it could melt too much and affect the cookie since it’s being cooked at such a high temp. I would recommend using baking chocolate or normal white chocolate.

      Hi! I use a brand that I bought from Japan before. I have also used Ujinotsuyu Matcha Hagoromo before which I think you can buy at Daiso.

      其實這個曲奇的糖份量不算高,做出來不會很甜。因為糖份量已經不太高再減會影響曲奇的口感。如果你想試一下再減多點糖我建議不要減超過10%或者你也可以試一下用低糖白巧克力那吃起來有人不會覺得那麼甜

      Hi! Sorry, I haven't tested how long it would last as mine are usually gone within 3-4 days! In general though, don't store them in the fridge, just place them into an airtight container, the fridge can dry out the cookies. You can also store the baked cookies once they're fully cooled down into the freezer and it'll last for a couple months, just separate each one with baking paper :)

      Dianne Delgado please do! And just a note to microwave them for about 10 seconds or so the next day when you’re eating so it can go all soft and gooey again, especially if you’re adding in the candy :)

      I’d recommend to chilling it prior to baking. Chilling it helps the cookie spread less during baking.

      Wong's Pantry does this rlly bring out the matcha flavor? i tried another recipe and the flavor wasn’t that strong so i was hoping this would actually taste like matcha

      Aliyah K. Yes I think the matcha flavour is quite prominent and have had feedback that this is a good recipe. If the matcha isn’t strong enough it could be that the quality of the matcha is not great, make sure that it’s being stored in an airtight jar/bag. Secondly if you want a really strong matcha flavour you can add more matcha powder than the recipe calls for.

      No, keep the temperature the same but bake it for longer. It may vary depending on oven but I would recommend baking for 8-10 minutes. This is making it half the size. If it's still too gooey for you after you rest it, you can place it back in the oven to cook a bit longer. I wouldn't recommend making it smaller than half the size as the size is part of what gives it that gooey centre.

      Guiah Leuterio you can substitute any nuts you like. I think macadamias would also go really well with these! ☺️
