I liked the parchment paper, but similar to stew, I like the potatoes to soak up the flavoring of the meat --- they are less dry that way! Now the corn and some broccoli and some cauliflower on the parchment sounds good too! Keep them other comment/ideas coming!!
Just finish the meat ad you decide. And, roast that corn in an iron skillet with butter to your liking also. Potatoes warmed in microwave with brushed oil to complete with salted skins... everyone has their way to the finish. But, growing up with onions and carrots on the bottom were a real treat, melt in your mouth! Thanks 😋
Way too much water....i only use about a quarter cup, as the meat makes it's own juice..... remember, you're slow cooking meat , not boiling it!..... Will be more tender with less water.
Needs to cook 6 hours on high, or on low 8 hours to fall apart. Brown and season the roast first to bring out more flavor. Only half the amount of those mushrooms. Cut the corn in half with a knife. That would be easier and won’t smash the corn. Wash the potatoes first and poke holes on them before adding to the crockpot. That would be easier.
I like the idea of everything together .. I need carrots in there also, and that meat wasn’t ready, that meat needed another 2 hours so it could be spread apart easier
Would have actually been tender and ‘shreddable’ had it been set on low and cooked longer. 6-8 hours Crockpots tend to cook better in low than high when wanting that really tender, shredded meat. When I do my roast in the crockpot I don’t add water either.. the meat creates its own juices which blend with the spices/mixes etc and gives plenty of moisture for the mushrooms to cook down. Just my opinion and experience.
I like how she said the meat shreds. Then, she could barely cut it😂 A roast that size needs more than 4 hours to fall apart. And the potatoes looked about 3/4 cooked. And where are the carrots 🥕 🤔 No seasonings for the meat. Just gravy. No salt and pepper on the potatoes. And you cut them. Must have been her first time doing this. Well, practice makes perfect.

Adding the parchment with the corn does look intriguing. But like you I do a lot of vegetables underneath the roast (have one going now) and my own sauce with spices. But I’d like to try the parchment and add corn also. I don’t know about others but I do an hour on high then the rest is low and slow! 👍🥰🇺🇸

If you add flour to the juices, you will get a thicker proper gravy. Or coat the roast in flour and sear it before cooking. To each their own. That's the best thing about cooking.
Always make my own gravy with the stock from the Meat if I’m doing any separately and oxo cube. This looks amazing I wouldn’t put sweetcorn in because I’m not a fan of that, but I definitely put carrots Swede turnip onion and maybe some home-made dumplings, but besides that this is wonderful. I did this recently in my crock pot with a chuck roast. Seered it on all sides with expellor or cold pressed oil. I used pink salt,ground fresh pepper, onion and garlic powder.Organic bone broth for liquid or purified water is healthier unless a person has time to make their own veg or bone broths from scratch. I stay away from food grade sand and food grade wood pulp in these packets and store bought au jus.They are loaded with chemicals,natural flavouring,dyes,and preservatives It is not organic.It is junk.Lab created. This is one thing I didnt get to learn from my mother before she passed. This & her enchilada casserole. I tried getting it all down. But her meat & gravy part, I do believe she was simple with it. Any tips from anyone would help. IF I were to get 2 packs of beef tips. Would 2 packs of McCormick like this be ok or would I need more mix? Potatoes are washed, dried, slathered in evoo and seasoned with salt then popped in the oven. No corn because too many carbs. Perhaps a salad or roasted veggies.
Instead of water, you could try beef broth to intensify the flavors and aroma. And as others have suggested, browning the meat prior to cooking in the crock pot can also add depth to the flavors and aroma.

That was not tender at all. To be tender it should have been cooked another couple of hours or more on high, or about 4 more hours on low. To really get a LOT more flavor from your roast sear all sides of the roast in a hot fry pan before putting into your slow cooker. A huge Onion sliced thick adds lots of delicious flavor as do nice big chunks of carrots. For people that have to worry about sodium skip that salt laden gravy mix and opt for a no sodium beef bullion and no salt seasoning. We always add out uncut Potato the last couple of hours of cooking , lifting the roast so that the Potatoes can be put under the roast and are in the liquid. YUMMMY!!

I tried this but the gravy didn't dissolve very well. The bottom was full of dark brown lumps. Onion soup mix dissolves well, otherwise I'd mix the gravy and the liquid (beef broth, not water) first. Even with the gravy mix the liquid isn't thick so I thickened it with a slurry at the end (the whisking got rid of the lumps). Brown the roast first, and definitely cook longer - maybe 4 hours high plus 2-4 hours low.
True statement about the gravy packets not dissolving. I found that to happen with a recipe that’s similar to this. So I pre-mix the gravy packets in a separate bowl with water. Once dissolved I then pour it over my roast that’s in the crockpot. I also add more spices and will sometimes use different types of gravy packets for a different flavor profile.
This is a variation of my mom's recipe I learned over sixty years ago. She added carrots and onions to the mix. It all went into a roasting pan back then. I never thought to switch to a crockpot. Thanks.
You can also save time and money and just add dry onion soup mix with a can of cream of mushroom soup. It cooks the roast well and also makes a great gravy.

Instead of water, we add 7-UP.. you can't taste it in the meat, and the acid helps break it down, so it's not tough. It so tender..

I've done this for years, even with the carrots, potatoes, and, onions . Sometimes, I use onion gravy mix,are stewmix.

Meat looks rubbery and I would never pour a pack of mushrooms in without rinsing them there is dirt all on them in bottom of the pack 😆
Some of the mushrooms needed to be cut up, they have pot roast seasoning, cut up the meat before you cook it is easier to serve
