Jedi knights are better at street fighting, they can hold alleys indefinitely and protect the stormtroopers. Sending them off into the masses yes it will demolish a chunk of the zombies but the knights line always becomes stretched and is flanked. Well that's my theory
I would have had the heroes out in the front and charging in each direction. They would have drawn the attention of the first waves and allowed for all those rows to remain untouched unleashing a massive constant burst of laser-fire for several minutes. That would have compounded over time and could have given the Star Wars army the victory.

This battle was not well planned for. If you have 5 M Zombies, you need at least 1 to 2.5 million Jedis.
