@@swankytuna4293 The FDA says that for fish to be eaten raw, it NEEDS to be frozen to kill parasites
Captain MufDyven and then there are places with more relaxed interpretations of the rule and "frozen" is interpreted as simply put on ice.
It's a common misconception that salt or vinegar brining of fish kills any parasites at all. The stomach acid of healthy adults is usually just enough to kill parasites but if not then you get infection. Brining may kill bacteria yes, though probably not all of them and not of if it wasn't very fresh to begin with.
Though if there are any parasites, salting draws out moisture from the flesh and that may make any parasites that are present try to wiggle out so that they are more visible.
I have live some of my life in the keys as a both commercial and charter fisherman we always used this dish as a bait fish. I was always told dont eat the bait. I was also in an Asian market three days ago and bonita was on the line..... thank you for this I will be eating this fish soon

Used to grill shark in spicy butter....tasted just like steak...served it with A-1.(soaked it in milk first;shark has an ammonia thing you have to get rid of.)

As a southerner who catches a lot of catfish and bass, I’m so curious to know if these techniques would work for fish down here and the best ways to prepare them in our climate.
You definitely could the most important part really is preparation. Some people are afraid of parasites, but that is easily fixed by sticking the fishin the freezer for about a week to kill any potential parasites. Then let it thaw and use however you like

These guys are at their manliest when they handle beef,pork,or any large land animal but they instantly turn into pansy hands when they touch fish. What's going on here?
Whole ungutted fish can be quite slimy and the texture feels very different from land animal protein that has been bled out, hung to dry and chilled. The first time I handled fish to gut and butcher it, it was also a bit unsettling, especially when you pull out the innards and don't know whether to expect parasites or anything half dissolved in the stomach.
