- Simple recipe for a Popular Jamaican street food Pepper Shrimp. There are MANY variations of this dish prepared and sold in Jamaica.
The most popular place to find this dish would be Middle Quarters St. Elizabeth, Jamaica. Upon visiting you will realize that each vendor has THEIR OWN way of flavouring the dish.
Use whole shrimp with the head. Even when the intestinal vein is removed, keep the whole shell on.
Remember that adding colouring/annatto is OPTIONAL. The redness can be obtained just by using PLENTY red hot peppers. However, if you want to use LESS pepper but still get that vibrant red colour, the annatto/colouring will help.
Whenever I'm filming I may use less of certain ingredients than my standard recipe because I'm just cooking for my family so please follow the RECIPE ingredients' quantities INDICATED.

Yeah the bell peppers are flavourful but the scotch bonnet gives flavour and heat 😁

Omg, this looks delicious can you please tell me what is the name of the coloring you use is it red or orange?
When making this at home, for colour I usually do one of 3 things:
1. Add annatto powder or annatto oil
2. Use ALOT of and only red scotchbonnet peppers
3. A mixture of red and yellow colouring OR orange

Any substitute for annatto oil?
You may use regular oil. The main use of it in this recipe is to help get that brilliant colour without EXCESS red pepper 😁 Many shrimp vendors just use ALOT of crushed red peppers to get the colour

Hi Geneve, I believe I found it at a Caribbean store. However, sometimes the regular supermarkets or Spanish stores have it. It might be labeled as Achiote

I devein mine but it doesn’t look as if most of them do.

I lived in Jamaica when I was a young girl but I don't remember the Shrimp being fancy and red but I am old. Lol.
I lived in Jamaica for over 26 years. The shrimp was never fancy that's for sure 🤣 Always sold in bags. But I would never buy bags since I'm not selling it 😏 Whenever I saw it, it was always a bright red from the red peppers they use. However, some vendors use less pepper and add annatto or other colouring agents. So the redness of the shrimp will always be determined by the vendor who made it.

For which step in particular?
I guess no salt or black pepper or vinegar or pimento needed
1. Salt and black pepper can be used. However, this time I chose to use seasoned salt and black pepper as stated in the video.
2. Pimento is an awesome additon 🤤 which is why I use it sometimes and included it in my other Pepper Shrimp video here ua-cam.com/video/Moz0iAL7J0o/v-deo.html
3. A little Vinegar helps with flavour and PRESERVATION if bagging the shrimp for sale. I didn't need it because these were all had the same day.
