Those were street food on literal streets, usually by the lower middle or middle class owners. You can find hygienic food in millions of places in Mumbai.
As a UA-cam food blogger I suppose you need to be fearless but I do notice there is little regard for hygiene among street food vendors in India. Aren’t you even a bit wary? Just a few observations include washing glasses on the pavement and using bare hands to handle food. In some videos I have seen they handle money and then food. I know the food is cheap but cheap doesn’t have to be unhygienic. I hate to imagine what goes on behind the scenes. There is a saying in Malaysia. “Don’t watch how they prepare the food or else you will never eat it.”
