There is just something so intriguing about watching William just craft supposedly decent ingredients in front of my eyes. I think the chili paste and whatever that fruity poo thing was the most impressive.
Fruity poo thing is tamarind. Ripe tamarind is really a sour fruit. We used to just eat it when we were kids. He just dissolved it in water. Whats really impressive is how he mixed sardine water, worcestershire sauce, and pepper to make fish sauce.
It may not be the Pad Thai Uncle Rodger was expecting, but I loved the fusion of international ingredients. As a fusion food lover myself, he didn't do that bad.

My favorite thai food is drunken noodles in all forms. It's a little less familiar to western taste than nutty-sweet-savory pad thai, but it's so damn easy to make, very herbal, and even when you completely ruin it as far as it being real pad kee mao, you still come up with something very edible because it's just vegetables and noodles and you can't really do that wrong. I would love to see that or at least more of these. this is how a lot of people cook because we can't be arsed to follow up on every ingredient and use frequent substitutions and it's fun to watch other people do it bc it's relateable
Pad ke mow is the dish I use to judge how good a Thai restaurant is I’ve never been to before. It’s never bad but when it’s amazing I know the rest of the menu will also usually be just as good.

You can definitely pad ke mow that's enedible. I once ordered some from a new place that had just opened up and had basically a bowl of chillis delivered. 🥵 I love spice, but when the only flavour is pure heat, youmessed up.

Now, now. Fish stock smells and tastes like a delicious, savory, often smoky broth, with an undertone of gross fish I guess. But one you can get past. Fish sauce doesn't even smell like fish. It smells like cat breath for some reason, and tastes very salty. There is nothing redeeming about drinking it directly

tamarinds are actually very tasty if you like sour food. They usually add chili to the popsicles, so they are sour and spicy, but the tamarind itself is sour with fruity qualities. It is one of my favorite fruits, we usually make flavored water out of them.

As somebody that gives people shit for the way they did their pad thai (to be fair, I lived in northern thailand for 8 years and am somewhat fluent in the language)... you did pretty good bro. "pad thai" as it is made in thailand is more or less their equivalent of "a mcdonalds cheeseburger", so trying to make it fancy is the part that is wrong. also it should be brown, not red. I've actually had pad thai with hot dog type sausage in it there too, although it's not common, and the time I had it was from a large/cheap pad thai shop doing a lot of volume of 30-40 types of pad thai, out of a temple courtyard on a market night ("next to a million other vendors in the temple courtyard and the city streets around it"). The most correctly thai thing about it is actually your wife going "we're not eating this shit for dinner, I'm going to cook real food".
