    Learn how to make Universal Gravy Base with our Chef Prateek Dhawan.
    0:00 - Introduction
    In it's simplest form it's just a lot of onions with some spices and oil. Seriously. An easy and simple multipurpose gravy base that can be used for gravy. Basically the same concept is used in most of the Indian restaurants to quickly prepare different types of curries. You may make this once and store it in the freezer and use it whenever required.
    Universal Gravy Base Ingredients -
    0:24 Preparation of Spice Mix
    2 tbsp Oil
    2 Bay Leaves
    1 tbsp Cumin Seeds
    2 inches Cinnamon Sticks
    7-8 Cloves
    3-4 Green Cardamom Pods
    1 Cup Onions (sliced)
    2 tbsp Ginger & Garlic (chopped)
    1 cup Tomato (chopped)
    5-6 Green Chillies (chopped)
    Water (as required)
    02:51 Preparation of Vegetable Gravy Base :
    2 tbsp Oil
    1 tbsp Red Chilli Powder
    1 tsp Turmeric Powder
    1 tbsp Coriander Powder
    1 tbsp Black Pepper Powder
    1 tbsp Garam Masala Powder
    1 tbsp Cumin Powder
    2-3 tbsp Melon Seed Paste
    4:20 Preparation of Vegetable Gravy/Curry :
    1 tbsp Oil
    1 tbsp Ginger Garlic (chopped)
    250 gms Assorted Vegetables (blanched)
    Salt (as per required)
    Coriander Leaves (for garnish)
    5:04 Preparation of Chicken Gravy/Curry :
    1 tbsp Oil
    1 tbsp Ginger Garlic (chopped)
    250 gms Chicken (chopped)
    Salt (as per required)
    Coriander Leaves (for garnish)

    Hello everyone Thank you for pointing that I did it this way to explain you guys that it is watermelon seeds in hindi we call it magaj seeds its cheaper than Cashewnut a good alternative for Cashewnut paste you can also use watermelon seeds paste in food

    I tried many base gravies and although at first it was a revelation it didnt take long to notice that no matter which curries were cooked with using it, they all tasted too similar to notice any meaningful differences.
    I now cook from scratch dish by dish and although it takes more time is superior.

    Hi guys chef prateek here you guys can also roast the onion and tomato by doing that you will get good smokey Flovour in your gravy plus that will increase gravy shelf life..you can store for busy day , family gathering or some event a dish to plan for advance

    One question, when I make curry, I used to puree tomatoes and the onions and then free and then add ground tomatoes. Can I add spices after, rather than pureeing the whole lot?

    A question to great chefs out there. Why is the curry base cooked in two different stages; first with the whole spices and then with spice powder whcih are then mixed together. Although the makeup is different, there is some overlap. Could you get the same result by using just the whole spices or just the powder?

      If u want gluten free then I suggest almond soaked in warm water then remove skin n blend it u can also use sunflower seeds or walnut

      If u are making in big batch to store in fridge or freezer use 4 onion and 4 tomato and cook till they reduce u can also roast them that will give nice smokey flavour
