- Phirni (firni) recipe: after testing various proportions of rice to milk, milk to sugar, as well as testing with different types of rice, we have finally settled on a phirni recipe that is quick and easy to make, but tastes exactly like the phirni we have eaten in our favourite Mughlai eateries in Calcutta such as Aminia, Arsalan, Shiraz, Aliah, Shabir, etc. This phirni is made with very simple ingredients-rice flour, whole milk, sugar and flavouring agents (we are using saffron or zafran in our phirni). Our version is made without any condensed milk or mawa because we found that they don't make any noticeable difference to phirni. We also like our phirni to be creamy and plain, so we have left out any additional garnishes.
Different parts of India have their own types of phirni-Punjabi phirni and Kashmiri phirni are especially well known. This particular style of phirni is popular in Mughlai eateries in Calcutta. No biryani meal is complete without a phirni dessert. Enjoy this recipe and if you give this a try, let us know how it turns out!

I tried this recipe today and it's perfect. I didn't haven't the earthen dessert bowls, hence I used a big pudding bowl. Thank you to you, all the way from Sri Lanka. This tastes so good!
The aesthetic quality of the video has to be the icing on the cake. Also, as I have found out already (after a rather sticky exchange :P) the procedure and the ingredients described here have invariably been described after detailed trials and research..the unbelievably accurate texture and consistency of the phirni in the final form bears testament to the fact. Don't have most of the required utensils to make this one at present, but the sight of this phirni has definitely given rise to an uncontrollable urge to book a Surat-Calcutta flight and take it from there!!

I made this yesterday and it turned out so tasty and similar to the phirni we get from shops. And I kept it in fridge for around 1 to 2 hours but some cups that were in it for the whole day taste so good today. They definitely taste richer after 12+ hours of cooling. Thanks for the recipe❤️

My mum uses Kewra Water for Agar Agar Pudding (water , sugar, lemon juice and tender coconut water and also the Cream cut into slices and when in season , it’s Palm Apple 😋😋😋) and She adds Rose water for her Phirni and she mixes Semolina and Ground almonds instead of rice and Lastly After pouring into the cups , She sprinkles some chopped Pistachios , Almonds , and Kish Mish .

This is perfect recipe! We made it at home and were overwhelmed by the smell and taste of the preparation.. ❤️❤️.. only thing to mention is that the timing of adding cardamom powder is not right I guess ..it gets clumped.. otherwise as I mentioned earlier Superb!

My mom had made Firni for my birthday in April and it did not turn out well. It was more of a payesh than firni, but the guests ate it anyway. So, when she saw BongEats have come up with a firni recipe, she made it again for baba's birthday following your recipe verbatim and this time it was GLORIOUS. It even passed the anti-gravity test. Also, she made it almost on a whim and those flat firni bhNaars weren't available right then so I just got a few chaa'er bhNaars from the local cha-wala and it turned out fine even in those.
