I love Aglio Olio pasta, Chef RV!!! Like you, I put lots of Parmesan cheese...and I really put a good portion of the crushed pepper flakes because mahilig sa spicy ang mga ka-tropa ko sa kain. Sometimes, I also add a handful of shrimps, just to give it a little variation...and because I like seafood, too. Sosyal talaga pakinggan ang 'chiffonade'...hahaha! I love your style, chef... aglio e olio , your recipe is more of a filipino version. Pasta water is important in making the sauce more creamy. Adding Anchovies with olive oil into your pan is also great. Boiling your pasta in 7 minutes makes it al dente. Halfway to boiling , then you can heat up your garlic , anchovies and red pepper flakes. Then add your parmigiano reggiano. I know this by heart since we make this every week.

Chef , you explained it well pero mas proper siguro if nag reserve Kayo ng pasta water para ma emulsified sa olive oil. Kung walang emulsification ay sobrang greasy ng pasta.

I had some leftover spaghetti noodles from new year’s eve so I cooked it with any oil and garlic with a dash of sesame oil 😊
