- Just a fun...spur of the moment...unscripted...unedited video of my first batch of ice cream in my new Lello 4080. The Lello 4080 is a top-of-the-line consumer ice cream maker with a compressor which is the type of machines used by commercial restaurants. Watch and have a good laugh...especially when I'm trying to locate my vanilla paste!!!
We used fresh egg yolks from our chickens and I thought this recipe was a little eggy but my wife said no its perfect don't touch it. I am going to use 3 yolks next time and see if she notices the different,ha. It might be just because of our fresh eggs i tasted the eggs so much but it was much tamer after I froze it for 5 or 6 hours. Anyway its a wonderful machine and thanks for sharing your video.
I have good containers however I wanted smaller batches I use jam jars
..4 does it..
Also my egg custard goes into the freezer for a hour that is covered with plastic..
Also the machine is pre cooled…and then put into 4 jars…remember to put pre cool jars..

Thanks. I have a question. At what point to stop the machine and take out the ice cream? While it still mixes, or to wait till it becomes clumped up and moves with the churning blade?
It's almost more of a feel for when to take it out, or in some cases it's timing issue. I pretty much always put it right in the freeze so it continues to harden.
I just try to wait until it gets as thick as it can without the paddle stopping because it's so thick.
Thanks, the recipe seem very heavy on the cream and yolks.. Have you compared it to simple/sicilian recipes?

Hi Toby! So, looks like a great machine, I do wanna make a lot of ice cream, is there anywhere on the manual any info in regards of how many batches can you make in a row? I would highly appreciate your answer. thanks a lot!
Also, if i boil my mixture for whatever reason the recipe needs to, do I have to freeze it or cool it down first of would it suffice to turn the cooling option on the machine on?
Hi...they say you can make a batch every 20 minutes but it really depends on the situation and the condition of your batter. If you don't use cooked batter it will freeze that quickly. I have only at the most made 2 batches back to back and the machine was fine. I pretty much only use cooked or at least heated batter. You can use it after you cook it by just letting it cool down but it takes a lot longer to freeze. I have made it and let it cool for just a couple hours but it still takes longer. My normal method is to make my batter, let it set in the refrigerator over night. Then make it the next day and it freezes pretty quickly. One tip I will give you...I always squirt a couple tablespoons of light corn syrup in when I make my batter. That is in addition to however much sugar is called for in the recipe. Corn syrup is not very sweet but it contains corn starch and the corn starch helps keep your ice cream from forming ice crystals when you store it so it helps keep it creamy. You can also use cooking glycerin.

Great review and tips Toby. I am a Bluebell Homemade Vanilla fan, but unfortunately they have gone cheap and their homemade flavor is just not there anymore. Will this machine produce that homemade taste like when we were kids in the old wood machines filled with snow or ice cubes? It is pretty expensive. Thanks. MRT. :)
Any homemade ice cream tastes better than store bought. I don't have this machine, I use a Cuisinart.

I’ve been eying this machine for months trying to decide between this one, and the cuisinart ice 100. Do you feel the much higher price for the Lello is worth it?
It was a huge debate for me as well. I am 200% glad I got the Lello!!!
100% agree with Toby, this machine is worth every penny and more! I’ve got the 5030 model and love it so far, only made 3 batches but it freezes very fast which is critical to making high quality ice cream. 😉
I purchased the Cuisinart Ice 100 and then read the reviews about the Lello 4080. I can tell you hands-down the Lello is a much better ice cream maker.
The Cuisinart cools down to -15°, the Lello cools down to -36°. The Cuisinart takes about 40 to 50 minutes for a very soft serve type of ice cream. The Lello takes about 17 minutes and the consistency is ready to eat from the get go.
I do run the ice cream maker for about 20 minutes before I put in the mixture, and I try to keep the mixture between 29 to 39°F, when I put it in. Hope this helps!
Can you make quality Italian ice with this unit?
