In my opinion, this is some of the best video editing on youtube... despite it being a gardening/cooking/science/creative channel. I watch Siloé do his thing for my inner gardener some days, the music listener on others, the intellectual side from time to time, and sometimes it's just because i feel like i'm watching a close friend. This is one of the most put together channels, and is very personal feeling. I never feel like he's wasted our time :)

Harvest when the stalk starts to become more brittle and when seeds naturally fall when you touch them. the drier and more mature they are before they completely fall out of the plant the better
Love red Amaranth such a beautiful plant. Great companion planting idea. We are planning to experiment with beans and sorghum next year. Grow grains, beans and molasses all in the same space.

I grew lemon cucumber last year and really enjoyed it. I've also grown amaranth the last 2 years but not near the cucumbers. I see a few cucumber beetles in my yard every year but not enough to cause too much damage luckily.

If that is the giant red amaranth 8-9 ft tall, with seedheads 2+ ft long, and everything is edible above the ground, then yes. Put some tree kale and tree spinach next to them, tying up to the amaranth (both gain vertical support). Same for growing beans growing upward all.

Amaranthus is a sacred plant. If you research the history before the Crusades, there were sacred harvest plants and people had great celebrations for it. I consider it a great privilege to grow it each year.
This is SO interesting because I planted Jamaican callalou last year which I believe is a form of amaranth. This year it came back on its own and with it seemed to come cucumber beetles! They also ate the leaves and and left them useless for our consumption...but...my cucumbers remained untouched!! I was amazed.
I'll definitely be trying this, I'm going to risk sowing more cucumbers in late July since I think I have 60 days before frost. I just got seed for some Indian cucumbers and I'm curious to try one this year if I'm lucky. I'll try growing them with amaranth as support - I'll let you know if I see any beetles or leaf damage. On your latest video you asked what I would change if I could - I would love to hear more of your music like you have in this video!

Amaranth, such a lovely plant! Although I know it as Callaloo, I am always amazed at how wonderful it looks when it is allowed to mature. When my amaranth goes to seed it is between 2 and 3 feet tall. What can I do to encourage it grow taller? Try growing a different variety. I have amaranth weeds in my lawn that start flowering at 6 inches tall, and now we've planted red garnett amaranth which are over 2 feet tall, still growing fast and not looking like they'll flower anytime soon. I think the size of the leaves may be a sign of the final size of the plant. Our weed kind have small leaves maybe up to the size of my thumb, while our red ones have leaves bigger than my hand. The stems are also much thicker and stronger looking on the red ones than the weed ones.
This was one of your better videos! Yes, I enjoy your singing, but that's not why. Many, many people are searching for old timers secrets. I have know thus one since I was a child, but never understood the "why" of it. I always thought it was to keep the insects happy at the edge of the garden. But now I understand which beetles are eating each other. You deserve a bumper crop! Callaloo is favorite of islanders. Americans not so much. But I even grow and eat Polk weed leaves. cut a large 2 liter soda bottle bottom off, just the flat part. Put seeds in 5 gallon bucket. Hold cut soda bottle against seeds, put end of vacuum hose on pour spout of cut bottle. Vacuum will on only suck up the lighter schaff, not the seeds. because the hose connected to pour spout restricts vacuum as the wider opening dispurses vacuum strength.
I planted these beside each other this past year and the Beatles that look like ladybugs but they're not let eat the leaves of the Cucumber they decimated the leaves of my amaranth and I don't know if that's such a good thing they were Beatles all the time back there. I might try it again but I just wanted to let you know the results I had and FYI I actually had Marigold planted in the same bed like a foot away and I still have those stupid little beetles! I'm doing some research for other deterrence or things to do that will attract stuff that will eat those beetles or something!

Grow the amaranth for its leaves, especially the tricolor variety. I throw seeds in pots and have young amaranth leaves until the cold. Just clip the larger plants and let the rest grow. Yum!
Also, I failed to mention, I live in Nevada and I have grown lemon cucumbers with amaranth ALSO!! I got a large crop of cucumbers! I think your on to something.

Yeah, i was thinking maybe pheromones. If you can, try to plant a cucumber some distance away from the amaranth and see if the beetles come back. If they do catch some and catch some of the amaranth beetle, then put them in a container together with some amaranth and cucumber. See if they attack each other.
Do you rotate your cucumbers year to year? I've read and I find it's not safe to grow cucumbers in the same location for 3 years. My cucumber crops so far have been fine (They do get beetles that look like lady bugs but aren't.) And I have grown amaranth for several years now.
Let us know if it works another season...you could also make a 'trap' crop near by. Which is kind of what you are doing...then the insects aren't so near the cash crop.
It is considered somewhat poisonous to cattle. I've read that it is because it soaks up excess nitrates that we introduce though fertilizers. It is known to be edible for humans, but you must get it from a clean place as they are becoming pesticide resistant and could have been heavily sprayed. As with any wild edible, research more if in doubt.
Another awesome video! Amaranth leaves taste kind of bland. When picked young and stir-fried with a bit of garlic they develop a amazing flavor. Once seeded, they started to pop up at all sorts of places I our yard the next years (which is ok with me), some folks would probably consider them sort of invasive.
Had to pause... I wonder if the cucumber plants growing up the amaranth choked it, making it less healthy (lower leaf brix) and therefore attracting the bugs to itself sacrificially. Interesting idea...
Interesting concept, although as I briefly mention in the video I later discovered that the bugs attacking the amaranth were a uncannily similar beetle to cucumber beetle. And as I later learned in my cucumber documentary from last year a variety like lemon cucumber doesn’t produce as much cucurbitacin that attracts the cucumber beetle.
@@suburbanhomestead I am sure that the similarity is coincidental. The only thing that ever gets any bug to eat any plant is poor plant health. The kind of bugs that attack can tell you what brix level of health a plant is at, too. Fascinating stuff. I just thought you might be interested.

Tardy to the party but can you harvest the seeds by hanging the heads to naturally dry? Would you still have to winnow?

we cook amaranthus leaves, some coconut scrapings and eggs together making it like scambled eggs. it tastes amazing. great video :)

I have been eating ammerath and lambs quarters for years, better then spinach . Doesn't cook down to nothing. Garlic is awesome with it.

It is a bit tedious to clean, so buying it is easier. I usually pop them. It tastes like miniature popcorn

Might try deer bags. It’s like a big pillowcase made from cheesecloth.
The bugs that eat the amaranth leaves may scare off the beetles that eat the cucumber. Maybe its a territory thing.

I try to rotate as much as i can. but it can be tougher in a smaller garden with limited sun exposure.

Once seeded, they started to pop up at all sorts of places I our yard the next years (which is ok with me), some folks would probably consider them sort of invasive.
They would be considered invasive, but they taste like popcorn once popped, so I don't think its a bad thing.
What variety of Amaranth did you grow?

I wonder if the cucumber plants growing up the amaranth choked it, making it less healthy (lower leaf brix) and therefore attracting the bugs to itself sacrificially. Interesting idea...
Interesting concept, although as I briefly mention in the video I later discovered that the bugs attacking the amaranth were a uncannily similar beetle to cucumber beetle. And as I later learned in my cucumber documentary from last year a variety like lemon cucumber doesn’t produce as much cucurbitacin that attracts the cucumber beetle.

The only thing that ever gets any bug to eat any plant is poor plant health. The kind of bugs that attack can tell you what brix level of health a plant is at, too. Fascinating stuff. I just thought you might be interested.
Oh, my goodness! You just helped me identify the weird beetle in my garden. I knew it wasn't Striped Cucumber Beetle because it just didn't quite vibe... But I could NOT find it on Google! Now I know what it is! The Pigweed

How long does it take too grow amaranth to maturity? My last frost is around end of October.
70 to 90 days
Yu can maake the process easier by sieving out the seeds before winnoming...
Next season.. Use what we southerners call serving dust on the leaves and eat the leaves the same way you would eat any other green leaf veggie.
I give my angels credit for things like that. They have wonderful powers.
