Mark, this chicken looks amazing! I live in northern Michigan, on 10 acres, and I think I am going to take a shot at recreating this experience in my backyard! I can't afford to travel there, but burn barrels are available at the farm supply store! Thank you so much for bringing all of us along on your foodie adventures! God bless!
Remember to put water in the metal bowl underneath the chicken. You are basically steaming/smoking/baking the chicken at the same time. That's why the lid is a tight fit. I am guessing the temperature is around 300 F during this stage which should be about 45 min. The extra heat during the final stage is for crispying the skin, so I am guessing 450 F for like 5 min . You should marinade the chicken in seasoning of your choice for 24 hours beforehand. Good luck!
Yea.... I'm from Northern MI near the Torch Lake area while my Uncle lives in Big Bay north of Marquette. I'm far away for now, but when I come back to visit I might need to also try this. Burn barrel days are a practically a religious ceremony when cleaning the property and I wouldn't mind having one with a chicken or two going instead of just brush.

Wow Mark you tried our Chicken Barrel BBQ "甕仔雞". It's crispy and juicy, especially dip with the pepper and chicken oil together. Everytime we went to the mountain area enjoy this BBQ chicken.

Btw I always keep that juice and freeze it to use later. When I fry noodles at home, i put some of the juice into the fried noodles. The taste is like professional cooking quality with that smoky taste. Just yummy.
This is really good Taiwanese food that mostly locals eat, but most of the foreign tourists don’t know about. I think it’s simply the restaurants serving these kinds of chickens are in the outskirts of cities or in the countrysides that most foreigners don’t usually go.
Hi Mark. This method of cooking in a barrel is common in a lot of countries. Especially in your own home country, Thailand. The chilli dips in Thailand for the Barrel Chicken is definitely the winner from my point of view. The juices left over from the meat in the barrel cooking is usually used for chicken stock or just drizzle it on top of rice. Dipping a juicy chicken into it’s own juices again is redundant.

The salt on plate must be a Formosan original magic salt that contains spices like glove or Chinese green peppers etc🧂. I love turnip cake of Taiwan.It's simple,soft and not powdery.🥢
