Ingredients:
6 to 7 large figs (needs to be enough for 1 cup of puree)
1 large egg
1/4 cup of milk (60g)
1/2 tsp of vanilla extract (3g)
1 cup of sugar (200g)
1/2 cup of butter, unsalted or salted (113g)
2 cups of all-purpose flour (240g)
1/2 tsp of ground cinnamon (1g)
1/4 tsp of salt (1g)
1/2 tsp of baking soda (2g)
Tools:
Food processor or blender
Large Bowl
Spatula
Whisk
Sifter, optional
Muffin pan
Paper cup liners

I remember when I was a child we had a big fig tree in our backyard and it had the sweetest figs. My mother would have us pick the figs and she would take them over to a Jamaican lady and she would make muffins. The best thing I've ever tasted. I'm going to try your recipe and I hope it reminds me of my childhood. I remember her muffins were a little heavy but they were very delicious and I've never forgotten the taste of those muffins. I believe if I had that recipe I would be wealthy today😋😍

Thanks!! You are very welcome! YES! In fact I took my applesauce muffin recipe and just replaced the applesauce with the fig puree and added milk. So very close.

@@inthekitchenwithmatt I cant believe I didnt notice that 😂 I guess all the youtubers I notice do it at the beginning of the video. Wether before or after is more effective makes me think why not both!? Im no analytic expert, I just go with my gut. Keep doing your thing Matt!

Matt can you use dried figs for this recipe? I don’t have access to fresh figs.
I haven't tried it with dried figs. You probably can but will need to adjust since fresh figs have more moisture in them. You may need to add some milk or water to compensate for the moisture lost. Try adding a couple tablespoons of water with the dried figs and them grind them up in a food processor to make the fig puree.
