- Today I am sharing with you another easy vegan, plant-based meal that is great for weight loss and one of my favorite lunch ideas as of late. Not only is this sandwich, full of healthy protein and carbs, but it also has the perfect amount of fat - without going over board, and it's satisfying and filling. Enjoy!

VIDEO RECIPE:
3 C chickpeas - smooshed
1/2 apple (Granny Smith works best)
1/3 C dried cranberries
1/4 c chopped pecans
Sauce - 6-8 TBSP PB2 cashew powder and water, or hummus or low fat vegan plain yogurt, 2 tsp lemon juice, 2 tsp dijon mustard, 1/4 tsp garlic powder, a pinch of salt. Mix well. Combine everything well and serve on sprouted bread or some type of grain bread. Enjoy!

I make chickpea salad, with celery, red onion, dill pickles, lemon, tahini, and Dijon mustard, turmeric, cumin and fresh rosemary, it’s my go to sandwich! And non vegan love it too! This looks great too! I will have to try it.

I made this today. I have made other versions but this is my favorite so far. I did change a few things because I had them on hand. I used walnuts instead of pecans and apple I had. I also added celery. Love the crunch. For the dressing, I used PB2 not cashew, and aquafaba instead of water. I also added black pepper and red pepper flakes. I had a little celery left and stuffed it with the sandwich spread to taste test. It was awesome. Thanks!
I didn't have an apple so I put an individual cup of applesauce, I think it's like 1/4 cup size. And used celery for crunch. It was soooo good! And that moistened it some also.
Bought these ingredients yesterday and finally tried it this morning (with the Cedar hummus). This was sooo good! Reminds me of a tuna sandwich so grateful for this :)

I have been addicted to chick pea salad lately - I stir in about a tablespoon or 2 of Veganaise or a plain soy yogurt if I can find one; mustard, salt, pepper, a little garlic, red onion, celery, lemon juice and sometimes a little green onion too - so good!!

Yum. I have similar version for a vegan sammie with boiled potatoes, lentils with some curry powder and seasoning. I add some tzatziki vegan sauce , fresh lettuce, tomatoes. 😋

Yes it is good just loaded with fat per serving. For weight loss not the best option - for health, it’s one of the better vegan mayos out there for sure

If you boil the chickpeas it removes the skins also.
