- In this Video I take a break from fishing and build a Custom Hybrid Offset Pellet Smoker. It has the ability to burn Pellets, Wood logs and splits or any combination of the two you need creating what I think is the most versatile smoker I've ever used. I can finally get that exclusive stick burning offset flavor, but still have the convenience and rock steady temps of a pellet smoker! Hope you enjoy the video!

Nice setup, I am currently looking for a 500 gallon tank to build a reverse flow pellet rotisserie system with a water tray setup where can add water from outside, then the plate in the bottom for the reverse flow system angled to catch grease and drain it to a shutoff valve where can have a bucket to catch. This will be on a trailer and also have a mounted generator to provide the power. The thinking behind it is to help support different Masonic Lodges with cooks for charity. Do you also have fire bricks in there to keep heat? Just a thought, maybe when wrapping keep the door closed till ready to put back in this would keep the temp up until ready to put the meat back in,
This will be my first time using a pellet smoker and I’m fixing to build me one. I like that hybrid idea that you built. I just need to learn how to set my pellet smoker so I can try to perfect my on hybrid.
Welcome to the hybrid club! I've been doing this "pellet-assist" setup for several years with great results. One tip - after the split is lit, move it off to side so that it can burn more slowly.
+Nordic Willy hey Willie, thanks for watching. I definitely figured that out as well. Once it’s good and burning I usually pull all the splits out towards the door but yes I love it. It works so great.

For my first one, I had a square firebox so it was easier to bolt the Smoke Daddy pellet hopper onto (kudos to Mercer for fabricating solution for round fireboxes which is much more difficult!). Search "pellet-assist" on bbq-brethren forum to see mine from several years back along with a few others.
I then built a vertical smoker with the same pellet hopper. Verticals are so much more effecient for pellet-assist. There have been a few attempts to sell it commercially. Ironside Smokers built a great pellet-assist smoker and now Camp Chef Woodwind is selling their inferior drawer concept which smolders the chunks (instead of fully combusting).
I thought of this idea last year and finally I just receive my pellet pro yesterday, cant wait to smoke and sleep lol

Thanks for the video, I also found the Trinity video and have been on my own journey. My dad and I built a offset many years ago and I am looking to do something like this to it. He passed away and it means a lot to me to keep using our pit but life is just busy! A pellet system would be more beneficial to me. The main chamber is about 48" x 24" and it has an extra warming zone built into the stack (24" x 12"). My concern was I might not get enough heat from the pellet system to keep it going but after your video I have a little more confidence. What do you think about having 2 systems feeding into the 1 offset firebox? Or do you think 1pellet system is enough? I live in the south so I am not worried about cold weather but I would like to get to 350 on a cool day and crisp up the skin on Thanksgiving turkey!
Love your pit. Looks sweet!!! I have Brazos and been thinking of adding the pellet feeder just like u did. What I don't get is how does the computer know the temp out in the cook chamber? Will it maintain temp with just pellets? Thank you.
The Temp probe for the pellet hopper system is in the cook chamber not the fire box, so it regulates the temp perfectly in the cook chamber with or with out splits evolved . when i do add splits its smart enough to know less pellets are required

+Casey King the end opposite the pellet hopper can be open or closed, I plan to make a cap for it. The other end remains open for the auger tube assembly. Thanks for watching
I just put in a vertical baffle aka “scoop” for my brazos as well. I have seen a few people drill a few holes in them to let a little more heat through, seems getting higher temps like 300 can be a challenge without them. Did you put holes in yours?

I have not put any holes in mine and honestly 275 to 300 is about as high as I ever go anyway and I haven’t had any trouble with that
Great video! Did you beun some amount of pellets in there with the wood? if so, how much?
I ran pellets the whole cook, and assisted with roughly 1 split per hour until i wrapped. total cook time was 16 hours at 250* and I burnt around 30-35lbs of pellets.
Great video I have a pitboss I have been playing around with, are the fire bricks worth putting in a pellet smoker?

@@merceroutdoors I been wondering if a taller smoke stack would benefit my 1100 pro series pit boss. Ive heard someone saying running a bigger stack than the grill needs will cause "stale smoke" and creosote build up.
So you’re using pellets and actual wood? I’m assuming you’re getting more smoke flavor since you’re biting actual wood.

+@thomasquantz5173 that’s the beauty of it , for the first 4 hours of the cook when the meat is taking in the most smoke I primarily run it like a traditional offset adding splits like u would a traditional. The pid controller automatically reduces pellet input while still controlling temps. Then when I’m ready to let it ride and get some sleep, I just stop adding splits and the pid makes its adjustments to pellet input and will still maintain the set temps throughout the rest of the cook
Do you get a lot of ash from the logs in your burning pot?
+C Sanders no with the deflector I made and the positive air flow coming up , I can’t distinguish that any of the log ash is getting in there , just the normal pellet residue
