Pretty crazy, since wheat-based noodles were US-inflicted upon the Japanese after WW2, lol. Making good ramen is not difficult. It's bogus Asian cooking.
Wheat based noodles have been produced in japan since at least 1333 , as certain areas in Japan are unsuitable both climatically and geographically for the production of rice . As with many ideas / products this was historically due to strong Chinese influence . Wheat based noodles were not "inflicted " after WW2 , it was simply that the US had a large surplus of wheat and Japan was a country in need of food .
Pork can be fully cooked while still possessing a pink interior. If you are concerned about Trichinosis, please note that it is killed when heated to 137F / 58.4C. For reference, Pork with a completely "white" interior is the result of being cooked to over 165F / 73.8C.
