Great video. Let more such videos of street side restaurants coming. Luwombo is a great versatile dish and one can create the filling as he wish. Here is what I would fill in the chicken. Chop equal amount of ginger and garlic. Make about one or one-and-half tablesspoon of each. Crush them together to create ginger-garlic paste, or use mixer to make a paste. You will have 2-3 tablespoons of ginger-garlic paste ready. Take about 200-300 gm of minced goat (this quantity can vary based on your chicken size. If the whole chicken is big then adjust the minced goat quantity accordingly), coriander, finely chopped onions and tomatoes. Pieces of potatoes but not too big cut. Have 2-3 tablespoon of fresh lime juice ready. Keep salt and chicken curry powder handy. Now take a wok, put 3-4 tablespoon of oil. Let the oil heat. Then put onion in it and fry until they turn brown. Put ginger and garlic paste and fry for about a minute. Now add minced meat in it. Put one tablespoon of chicken curry poweder. Add salt as per the your preference. Fry the mixure, keep stiring about 8-9 minutes. Add tomatoes and potatoes. Fry it by stiring until the potatoes are cooked. Add coriander and mix it well. Put lime juice. Meat should be almost cooked. Your stuffing is now ready. Keep it aside. Now follow Luwambo receipe as you always do. But this time put this mixure inside the chicken and steam it. You have your delicious Chicken Luwambo with minced meat ready!
Ooh yes, you can use any kind of banana leaves, plantain, matoke, green, purple, hawaiian plantain as long as the leaves are still young. The young leaves are easy to mold after grilled for two minutes...l was shocked when I saw the same thing in Hawaii, but for them, they use pork... Enjoy your luwombo. Hope this helps. 😂😂😂😂
